Recipes and tips for using the Bountiful Baskets 6-18-16 Distribution and in-season produce. Melons, corn, pineapple and purple cauliflower are just a few of the items I received.
I picked up yet another amazing basket yesterday. The veggie basket was overflowing with goodness. I honestly can’t remember the last time the basket was this full. I’m so thankful I also contributed for the Picnic Pack and the Salad pack as these add-ons made up for the smaller amount of fruit in the Conventional basket this week. So much produce goodness it’s difficult deciding what to eat first sometimes.
You’ve got your Bountiful Basket home, cleaned all your goodies and now comes the fun part – deciding what to make with all the awesome produce. If you didn’t get a basket, you can still use these recipes with produce you purchased at the farmer’s market or grocery store – it’s all in season now, readily available and prices out very well. I received the following items in my Conventional basket this week:
1 honeydew melon
3 Roma tomatoes
15 red potatoes
4 ears of corn
1 spaghetti squash
1 bunch of asparagus
2 Purple cauliflower
4 Eight Ball squash (2 were a volunteer thank you). These can substitute in any zucchini recipe.
