Menu Monday will be a weekly feature on A Reinvented Mom. I like to plan a variety of meals, using a combination of family favorites and new recipes. I also like most of our weeknight meals to be of the quick & easy variety. No one wants to spend an hour in the kitchen cooking dinner during the week, especially during the summer. It’s a challenge to come up with meals the entire family likes, but it doesn’t stop me from trying.
MONDAY – Crockpot Shredded Beef Enchiladas. This is a new recipe that looks really good. Bonus points for using the crockpot.
TUESDAY – Leftovers/Kids’ Choice (Mom has an evening meeting)
WEDNESDAY – Balsamic Grilled Chicken from The Farmers Wife. Another new recipe we are trying.
THURSDAY – Spaghetti.
FRIDAY – Make your own Cobb Salad.
SATURDAY/SUNDAY – Slow Cooker Chicken Philly Sandwiches by Mel’s Kitchen Cafe. The boy loves Philly Cheesesteak, hopefully he’ll like this new chicken version.
