Good Morning! I hope you had a wonderful weekend! The Teens had a 4-day weekend and we were lucky enough to have beautiful weather the entire weekend. We cooked on the grill (those days are numbered!) and got some chores done around the house (think leaves, lots & lots of leaves). It looks like we have more nice weather ahead this week – woo hoo! I’m definitely going to enjoy it because I know the snow is going to start flying soon.
Halloween is on Friday. I’ll be making our traditional dinner: Mummy Dogs and Mac ‘n Cheese. Not the most nutritious meal, but The Teens still enjoy it. I have tried to “healthy” it up a little over the years, and I now use the Hebrew National hot dogs and homemade (or Annie’s) mac ‘n cheese. Do you have any traditional Halloween meals? It’s Monday, and that means it’s time for the weekly menu. Monday Menu is a weekly feature on A Reinvented Mom. I like to plan a variety of meals, using a combination of family favorites and new recipes. While I do assign meals to days, many times I end up swapping them around as the week unfolds – life happens. I also like most of our weeknight meals to be of the quick & easy variety. No one wants to spend an hour in the kitchen cooking dinner during the week. It’s a challenge to come up with meals the entire family likes, but it doesn’t stop me from trying.
MONDAY — Cheeseburger Wraps.
TUESDAY — Chicken Noodle Soup – I want to try this version. (11/9/14 Edited to add: this recipe was a hit across the board for my family and I will make it again. Make sure you have extra broth on hand because the leftover noodles really soak up the broth.)
WEDNESDAY — Eat Out – attending a fundraiser dinner.
THURSDAY — Slow Cooker Ranch Pork Chops.
FRIDAY — Mummy Dogs with Mac ‘n Cheese (this is our traditional Halloween dinner).
SATURDAY — Leftovers.
SUNDAY — Southwest Spaghetti.
SIDE DISHES — Romaine Salad, Spinach Salad, Mashed Potatoes, Roasted Veggies, fruit.
