Using Your Bountiful Basket – 8/9/14 Distribution

It’s Saturday and I’m excited about getting my Bountiful Basket this week.  I also contributed for a few extras – the Lunchbox pack, Juice pack, case of peaches and a flat of strawberries .  Now comes the fun part – deciding what to make with all this awesome produce.  You didn’t get a basket this week or don’t have Bountiful Baskets in your area?  No problem!  You can still use these recipes with produce you purchased at the farmer’s market or grocery store – it’s all in season now, readily available and prices out very well.

I’ve compiled a list of 10 recipes using Conventional basket goodies and 14 recipes for Add-On items.  These recipes include family favorites and other recipes I would like to try.  Hopefully you’ll want to try a few, too.  Click on the BOLD colored recipe title to link directly to the recipes.

CONVENTIONAL BASKET RECIPES:

One Pot Pasta by A Reinvented Mom.  Use tomatoes.
Citrus, Fennel & Avocado Salad by Foodie Crush.  Use fennel; serve over living lettuce.  Use citrus from lunchbox pack if you ordered one.
California Slaw by A Reinvented Mom.  Use cabbage.
Grape Salad by Proud Italian Cook.  Use green grapes (add red, too, if you have them).  Scroll down about halfway for the recipe.
Kung Pao Chicken Lettuce Wraps by Iowa Girl Eats.  Uses living lettuce.
Cherry Limeade Fruit Dip by Katrina’s Kitchen.  Use limes.  Calls for protein powder (omit if you don’t have).
Health Benefits of Galia Melon by The Health Benefits.  I plan to peel, slice & eat my melon.  Would also be good in a fruit salad – yumm!!
Grilled Teriyaki Chicken & Pineapple Kebabs by Lovely Little Kitchen.  I love grilled pineapple!

JUICE PACK RECIPES (some of the recipes above use Juice Pack items, too):

Apple Dijon Kale Salad by Budget Bytes.  The first kale salad I ever tried, and still my favorite today. The salad dressing is to die for (you’ll want to lick your plate)!
Pineapple Whip by Detoxinista.  Can’t wait to try this.
Citrus Marinated Beets by The Gracious Pantry.  I’m not a huge fan of beets, but am going to try this recipe.
Refrigerator Pickled Beets by Alton Brown.  Or maybe I’ll give these a try.
Creamy Cucumber Dressing by Chef in Training.  Use cucumber.  I’ll probably substitute lime for the lemon.

LUNCHBOX PACK RECIPES (some of the recipes above use Lunchbox Pack items, too):

Balsamic Roasted Carrots by Crumb.  I’ve made this using regular & baby carrots with good results.
Favorite Pasta Salad by A Reinvented Mom.  Uses cherry/grape tomatoes, carrots, snap peas, whatever you have on hand.
Cucumber & Asian (Apple) Pear Marinated Salad by Just Bento.  Use apple pear.
