Using Your Bountiful Basket – Nov. 15, 2014 Distribution

Our Distribution yesterday was a stark contrast to the previous one.  While we enjoyed a beautiful Fall day last time, yesterday was a full-on snow storm.  Yuck! Luckily we have a nice, warm indoor space for the winter.

This week I contributed for Conventional and Organic baskets, in addition to a case of Honeycrisp apples.

Now comes the fun part – deciding what to make with all this awesome produce. Even if you didn’t get a basket, you can still use these recipes with produce you purchased at the farmer’s market or grocery store – it’s all in season now, readily available and prices out very well.

I have compiled a list of recipes using Conventional & Organic basket ingredients, as well as the Honeycrisp Add-On.  Be sure to check out all the categories, as there is quite a bit of “crossover” again this time.  These recipes are a combination of family favorites and new recipes I would like to try. Copycat Panera Fuji Apple Dressing.
Baked Asparagus with Lemon Butter & Parmesan.
Thai Cucumber Salad.
Watermelon Cucumber Salad.

Steel Cut Oatmeal Breakfast Bites with Asian Pear – these look like an awesome “grab & go” breakfast for busy weekday mornings.

ORGANIC BASKET RECIPES:  mine contained English cucumber, Baby bok choy, Comice pears, Fuji apples, spinach, cranberry, celery hearts, green beans, grapes, radishes, banana, yams, Italian squash (aka zucchini).

Healthy Sweet Potato Casserole – I am putting this on my Thanksgiving menu.  Use the yams in place of sweet potatoes.
Cranberry Orange Bread.
Roasted Herb Vegetables – this looks really versatile for using whatever you have on hand.
Radish & Cucumber Salad with Garlic-Yogurt Dressing.
Rosie’s Bok Choy Salad.
Cheesy Zucchini Rice.
Spinach & Cheese Quesadilla.
Baked Apples.
Braised Celery.
Comice Pears – these are so good on their own – just slice & serve with a little cheese (Havarti & Brie work great).

HONEYCRISP APPLE CASES:

Honeycrisp Apple Sangria – would be a great addition to your Thanksgiving feast.
Chicken Salad with Honeycrisp Apples & Candied Walnuts – sub out leftover turkey for a post-Thanksgiving meal.
Apple & Brown Sugar Snickerdoodle Cake.
