Instant Pot Baked Sweet Potatoes come out perfectly soft, tender and fluffy every single time! Easy to make, great for meal prepping and doesn’t take up valuable room in the oven.

With the holidays fast approaching everyone is thinking about sweet potatoes and pumpkins, am I right? These vegetables seem to be a staple at family Thanksgiving and Christmas dinners.

But after you see how easy they are to make and the recipes you can use Instant Pot Baked Sweet Potatoes in, this will become a weeknight go-to.

One thing about the holidays, birthdays, and other occasions that draw big crowds is the shortage of room on the stovetop and in the oven. It’s a pain trying to juggle all the dishes with a hungry family breathing down your neck.

So I decided to experiment with sweet potatoes and the Instant Pot. Verdict: I will never make these on the stove again! It was so easy to just throw them in and go. No mess to clean up and I must say I like them much better cooked this way.

These are also perfect for meal prepping. Using our savory ideas below, you could easily make a full meal using sweet potatoes.

Well, that was easy enough! These are the ONLY ingredients you need to make them. But we recommend jazzing them up with sweet or savory toppings to take them to the next level.

Broccoli and Cheese Spud – This is steamed broccoli and melted cheese loaded into the potato. Talk about comfort food!

Buffalo Chicken Sweet Potatoes – Another great dish for meal prepping that’s really easy. Simply prepare your buffalo chicken, use the Instant Pot to bake your sweet potatoes, then top with some extra ranch and you have an easy meal!

Can You Stack the Potatoes or Do They Have To Be in a Single Layer?

Yes, you can stack potatoes. Just make sure you don’t go over the max fill line.

Tips for Making and Storing

  • Try to buy sweet potatoes similar in size so they cook evenly.
  • Store cooked potatoes in an airtight container for up to 4 days.
  • Don’t vent your Instant Pot too close to your kitchen cabinets – the hot steam could damage the finish.

Equipment

Ingredients

  • 4 medium-sized sweet potatoes, about 10-12 ounces each
  • 1 cup cold water

Optional Toppings

  • Butter
  • Maple syrup
  • Whipped cinnamon butter
  • Whipped butter
  • Marshmallows
  • Chopped pecans

Instructions

  • Rinse and scrub the sweet potatoes (use a veggie scrubber brush). Prick each potato 4-5 times with a fork.
  • Add water to the Instant Pot.
  • Place the steaming trivet inside the pot and place the potatoes on top of the trivet.
  • Secure the lid and turn to seal the pot. Make sure the valve is set to “sealing”.
  • Using manual mode, set to high-pressure cook for 15 minutes. Actual time will vary based on the size of your sweet potatoes – less time for smaller potatoes, more time for larger ones.
  • Allow the pressure to naturally release for 10 minutes. Carefully release any remaining pressure manually.
  • Carefully remove the lid, and remove cooked sweet potatoes (tongs work great!).
  • Serve with butter or other toppings of your choice.
  • Leftovers should be stored in airtight containers in the refrigerator for up to 4 days.
