Good morning, Friends! I hope you had a wonderful Thanksgiving weekend, filled with family, friends and (of course!) good food. We celebrated with a few friends and stuffed ourselves silly with traditional Thanksgiving fare.
As I typed the date for this post, I have to admit I cringed a little. December? Really?! How the heck did it get to be December already? This year seems to have just flown by.
December also marks the start of basketball season. As I was filling in the calendar for December, I started to freak out. I think it’s going to be a little crazy around here the next few months because The Boy is playing on 2 teams. I’m still trying to determine the best way to handle meals. I don’t want (nor can we afford) to eat out 3-4 nights a week. The slow cooker will certainly come in handy, and I may try to pack sandwiches to take to some games. If you have any ideas, please share in the comments. I’d love to hear how you handle game night meal times.
Here’s what happened on the blog last week:
– Easy Cranberry Sauce – uses fresh cranberries. I have been munching on leftover cranberry sauce with Brie and crackers (yummy!).
It’s Monday, and that means it’s time for the weekly menu. Monday Menu is a weekly feature on A Reinvented Mom. I like to plan a variety of meals, using a combination of family favorites and new recipes. While I do assign meals to days, many times I end up swapping them around as the week unfolds – life happens. I also like most of our weeknight meals to be of the quick and easy variety. No one wants to spend an hour in the kitchen cooking dinner during the week. It’s a challenge to come up with meals the entire family likes, but it doesn’t stop me from trying.
MONDAY — Easy Chicken Pot Pie – new recipe. I’ll be halving this recipe and substituting turkey for chicken. This should finish off the last of our leftover turkey (yea!). (12/8/14 edited to add: this was amazing! A solid 4 thumbs up from my crew. I omitted the peas, added a large cooked, cubed potato and used Trader Joe’s 21 Seasoning Salute in place of the Poultry Seasoning. I’ll definitely be adding this to our meal rotation.)
TUESDAY — Sabatino’s Smoked Mozzarella, Artichoke & Garlic Chicken Sausages. The Girl begged for these at Costco – hoping they are good. I’ll serve this with roasted potatoes, peppers and onions. (12/8/14 edited to add: the sausages were really good and were perfect for a weeknight meal. The Girl declared them “the best she ever tasted”.)
WEDNESDAY — Vegetable Beef Soup.
THURSDAY — Eat Out.
FRIDAY — Blackened Tilapia – new recipe. I’ve had this pinned for a while and can’t wait to try it.
SATURDAY — Leftovers.
SUNDAY — Tater Tot Casserole – another request from The Girl.
SIDE DISHES — We have a salad and fresh fruit with most meals. Roasted veggies (asparagus, broccoli, green beans, etc.) are popular around here, too.
