Monday Menu – Sept. 22, 2014

This coming week will be a repeat of last week, just ramped up a few more levels (seriously – it’s going to be nutso around here!).  In addition to (sometimes multiple) activities each evening this week, its HOMECOMING WEEK – woo hoo! I made a point to select easy meals this week because I want to spend as much time as possible enjoying the week’s events, not slaving away in the kitchen.

If you’ve been here before, you’ll probably notice we are eating out a little more than usual this week.  Due to various activities, we sometimes arrive home well after dinner time  (let’s be honest – sometimes we don’t arrive home until bed time or later).  While we try to limit our meals out, I don’t have a problem with “intentional” eating out.  I do try to avoid the “it’s dinner time, we are all starving, I’m tired, I don’t have a plan, let’s hit the drive-through” style of dining out.  You know what I’m talking about, right?  Even a simple Menu Plan like the one I created for this week will make a difference.  I spent about 10 minutes yesterday checking out the food I had on hand and finalizing our Menu Plan for the week.
Monday Menu 9-22-14

It’s Monday, and that means it’s time for the weekly menu.  Monday Menu is a weekly feature on A Reinvented Mom. I like to plan a variety of meals, using a combination of family favorites and new recipes. While I do assign meals to days, many times I end up swapping them around as the week unfolds – life happens.  I also like most of our weeknight meals to be of the quick & easy variety. No one wants to spend an hour in the kitchen cooking dinner during the week, especially during the summer. It’s a challenge to come up with meals the entire family likes, but it doesn’t stop me from trying.

MONDAY — Spaghetti, Romaine Salad, Garlic Bread.

TUESDAY — Eat out.

WEDNESDAY — Garlic Fried Rice.

THURSDAY — Eat out.

FRIDAY — Tailgate fundraiser at the high school.

SATURDAY — Leftovers.

SUNDAY — Spicy Garlic Shrimp – carryover from last week.

SIDE DISHES — I received a new co-op basket over the weekend and my side dishes will be selected from the recipe round-up posted HERE.

We tried a few new recipes the past two weeks and I thought it would be fun to review them to let you know how we liked them.
Garlic & Mushroom Queso Fundido – You have to make this NOW – seriously, it’s that good.  The mushrooms in this dish are amazing (The Teens even raved about them).  I offer a heads-up on this recipe:  you truly need to eat this as soon as it comes out of the oven & has had a chance to cool a bit.  It firmed up considerably when it completely cooled.  I will definitely be making this again.

Antipasto Salad Kabobs – these were a hit, as I knew they would be.  This recipe is truly versatile – just use what your family likes and whatever you have on hand.

Slow Cooker Hawaiian BBQ Chicken Taquitos – a long title for a delicious dish. These tasty little taquitos were a hit with the entire crew, especially The Girl (Who Doesn’t Like Meat).  And the pineapple salsa was spot-on.  I made most of the batch into taquitos, and The Teens had the leftovers for after-school snacks.  I’m thinking these would also freeze pretty well.
