My No Bake Lemon Icebox Pie is refreshing and full of flavor. It can be served refrigerated or frozen and requires just 5 ingredients! 

In the summer months no one wants to heat the house up while you are cooking. This is one of the major reasons I love no bake desserts. And besides, when life gives you lemons, make Lemon Icebox Pie! 🙂

What’s In a Lemon Icebox Pie? 

Graham cracker crust – homemade if you have time or the small store bought crust is good, too

Lemon juice – please use fresh! With limited ingredients, you want to use the best quality you can find. And fresh is better than the store bought brand in the green bottle (pinky promise!). 

Sweetened condensed milk

Vanilla

Lemon zest – if you don’t have a zester, use the side of your cheese grater (the side with the teeny tiny holes)

How To Make Lemon Icebox Pie

If you are making a homemade graham cracker crust, you’ll want to do that first.

Start by combining all of your ingredients, except for the crust, into a medium mixing bowl. Whisk until the lemon mixture thickens. 

Pour filling into the prepared crust. If needed, use the back of a spoon to smooth it out. 

Place in the fridge to chill for at least 4 hours before serving. You can also refrigerate it overnight if you are serving it the next day. 

Pie Garnish Ideas

Everything is just prettier and looks more appetizing and festive when there’s a garnish! Here are some ideas that we use. 

  • Fresh berries 
  • Lemon slices/wheels
  • Whipped cream
  • Lemon zest
  • Graham cracker crumbs 
  • Toasted coconut
  • Maraschino cherries

Can I use a homemade graham cracker crust? 

Yes! I knew you were going to ask that because you either love making desserts from scratch, or you forgot to grab one at the store. Here’s my Homemade Graham Cracker Crust Recipe and good news, no baking required! 

I should also add that you can use a regular pie crust or even those made from shortbread cookies or lemon cookies. The graham cracker version happens to be our favorite with this old fashioned dessert.

How do you store leftover icebox pie? 

It’s up to you. You can store it in the refrigerator for 3-4 days but it’s best to eat it in the first 1 to 2 days. Over time the crust can get somewhat soggy as the filling starts to break down. I like this pie plate with a cover for storing leftover pie.

You can also store in the freezer for up to 4 months if you wrap it tightly in plastic wrap or foil and place it in a freezer safe bag. This includes individual slices and whole pies.

Is icebox pie supposed to be served frozen? 

Many people do prefer lemon icebox pie frozen, but it’s a personal preference. On hot summer days, I would say go with frozen. Plus you don’t have to worry about allowing time for it to thaw if you’re serving it as a frozen treat.

Ingredients

  • 1 graham cracker crust
  • ¾ cup lemon juice, fresh, not the stuff in the green bottle
  • 2 cans sweetened condensed milk
  • ½ teaspoon vanilla
  • 1 teaspoon lemon zest

Instructions

  • Combine lemon juice, milk, vanilla and lemon zest in a medium bowl. Whisk until mixture thickens.
  • Pour into the graham cracker crust.
  • Chill for at least 4 hours or overnight.

Notes

  • Optional garnishes: fresh berries, lemon slices, whipped cream, lemon zest, maraschino cherries, toasted coconut or graham cracker crumbs.
  • Can be served frozen if preferred.
