My Cousin Betty was a wizard in the kitchen. The woman could make magic from crumbs. Truly.

She came to visit me in Colorado many years ago. In addition to eating VERY well that week, the two of us enjoyed spending time together in the kitchen.

What a treat for me to learn from an amazing cook!

Cousin Betty shared a few of her treasured recipes. I’m thankful I took the time to write them down so I can recreate her dishes for my family.

Today I am sharing her breakfast casserole recipe. Betty humbly called it “Breakfast Treat”. And what a treat it is!

What Makes Betty’s Overnight Breakfast Casserole Sooo Good

Like many of her recipes, Cousin Betty’s Best: Easy Overnight Breakfast Treat Casserole is a unique twist on the same old, same old breakfast casseroles floating around.

In fact, I’ve never seen a breakfast casserole quite like Betty’s dish. A couple surprise ingredients make this overnight breakfast casserole truly special.

Like many breakfast casseroles, this one uses eggs, sausage, cheese and bread. But that’s where the similarities end.

The mushroom soup comes through like a gravy and gives this breakfast casserole a comforting, homestyle taste.

And whatever you do, don’t skip the oregano. I realize it might sound strange but oregano is the ingredient that makes this casserole sing. Trust me, mmkay?

How To Make Cousin Betty’s Best: Easy Overnight Breakfast Treat Casserole

First, this is a make ahead recipe. Which makes it an ideal choice for busy weekends and holidays.

Toss the ingredients together the night before and all that’s left is to pop it in the oven the next morning. Easy peasy.

Second, Betty never measured ingredients. The measurements I’ve included here are the ones I’ve used for years. Feel free to adjust the ingredient quantities to suit your family’s tastes.

  • Start by cooking the breakfast sausage. I use a chopper utensil to get an even crumble when cooking ground meats.
  • While the sausage is cooking, gather the remaining ingredients.  Cube the bread slices, place in the prepared casserole dish and sprinkle dry mustard over the top.
  • Combine the eggs, milk, salt and pepper. Whisk together, then pour over cubed bread.
  • Layer the remaining ingredients in the following order: half of the cheese, cooked sausage, undiluted soup, remaining cheese and end with a sprinkling of oregano.
  • Cover the dish and refrigerate overnight.

The next morning, remove the casserole from the refrigerator and set on counter until oven is ready. Bake for about an hour.

Ways To Serve Betty’s Overnight Breakfast Casserole

I frequently select a couple make ahead dishes for the holidays. Anything I can do to ease the stress of a holiday meal is a smart move in my book.

And breakfast is no different. Heck, it’s probably the BEST time to prepare a make-ahead meal.

Who doesn’t enjoy rolling out of bed on a holiday morning knowing you’ve got breakfast covered? Pop the casserole in the oven and let it bake while you enjoy watching your kiddos open presents or hunt for Easter eggs.

And it’s a lovely choice for a weekend brunch. Or make it “just because”. Your people will thank you.

While this dish is hearty on it’s own, I like to serve it with fresh berries, a fruit salad or air fried breakfast potatoes. You can also add croissants or muffins for a delicious, no hassle meal.

Ingredients

  • 4 slices bread
  • 1 tsp. dry mustard
  • 5 eggs
  • 1 1/2 cups milk
  • 1/2 tsp. salt
  • 1/4 tsp. ground black pepper
  • 1 pound breakfast sausage, cooked
  • 1 can cream of mushroom soup, undiluted
  • 2 cups shredded cheddar cheese, divided use
  • 1/2 tsp. oregano

Instructions

  • Lightly coat a 9x13 casserole dish with non-stick spray.
  • Cube the bread and place in the prepared casserole dish.
  • Sprinkle dry mustard over cubed bread.
  • Mix eggs, milk, salt and pepper together in a small bowl. Pour over bread.
  • Sprinkle 1 cup cheese over egg & bread mixture.
  • Layer cooked sausage over eggs, bread & cheese.
  • Top with undiluted mushroom soup.
  • Cover with remaining cup of shredded cheese.
  • Sprinkle oregano over top of casserole.
  • Cover and refrigerate overnight.
  • Preheat oven to 350 degrees. Remove casserole from refrigerator and set on counter until oven is ready.
  • Cover dish with foil and bake for 1 hour.

Notes

  • For crispier top, remove foil for last 1/2 hour of baking.
  • I use 2% milk in this recipe. For a richer casserole, use whole milk or half & half.
  • Refrigerate leftovers (if you have any!).
