No Bake Lemon Icebox Pie

  • 1 graham cracker crust
  • ¾ cup lemon juice fresh, not the stuff in the green bottle
  • 2 cans sweetened condensed milk
  • ½ teaspoon vanilla
  • 1 teaspoon lemon zest


  • Combine lemon juice, milk, vanilla and lemon zest in a medium bowl. Whisk until mixture thickens.
  • Pour into the graham cracker crust.
  • Chill for at least 4 hours or overnight.


  • Optional garnishes: fresh berries, lemon slices, whipped cream, lemon zest, maraschino cherries, toasted coconut or graham cracker crumbs.
  • Can be served frozen if preferred.
  • You can store leftover pie in the refrigerator for 3-4 days. Best eaten the first day or two.
  • Leftover pie can be frozen: wrap individual slices in plastic wrap then store in a plastic freezer bag.
