1cupsugar
1cuppeanut butter
1egg
Instructions
Preheat oven to 350 degrees. Line a cookie sheet with parchment paper or a baking mat.
In a medium bowl, mix all ingredients until smooth.
Using a small cookie scoop or a spoon, scoop dough onto parchment lined cookie sheet. To make the criss-cross pattern, press down with the bottom of a fork, turn the cookie a quarter turn and press down again with the bottom of the fork.
Bake for 10-12 minutes. Allow to cool on the pan for 2 minutes, then transfer to a wire rack to finish cooling.
Notes
- Be careful not to overcook or you will end up with very crunchy cookies. - We think these are best eaten the same day you bake them. If you do have leftovers, store in an airtight container. - Optional add-ins (1 tsp. vanilla or chocolate chips) may also be added.
