Quick Cherry Bread

Maraschino Cherry Bread is a quick and easy bread recipe but has all of the flavors of an old-fashioned dessert.

Ingredients

BREAD

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • teaspoon salt
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 1 large egg
  • 1 cup buttermilk room temperature
  • cup vegetable oil
  • 1 teaspoon real vanilla extract
  • 2 teaspoons almond extract
  • 16- ounce jar of maraschino cherries chopped (reserve the juice)

GLAZE

  • ½ cup powdered sugar
  • ½ teaspoon maraschino cherry juice
  • 1 tablespoon milk

Instructions

BREAD

  • Preheat oven to 350 degrees F.
  • Whisk together flour, baking soda, and salt in a large mixing bowl. Set aside.
  • In a medium bowl, combine the granulated sugar, brown sugar & egg until combined. Add buttermilk, oil, vanilla, and almond extract and mix until just combined.
  • Slowly add the wet ingredients to the flour mixture. Gently mix until combined.
  • Fold in chopped cherries until evenly distributed.
  • Pour batter into a greased 9x5 loaf pan.
  • Bake for 55-60 minutes or until a toothpick inserted in the center comes out clean.

GLAZE

  • Whisk the powdered sugar, cherry juice, and milk together until thoroughly combined.
  • Drizzle over the cooled bread and serve.

Notes

  • Use a knife or small food processor to chop the cherries.
  • Rotate the bread pan halfway through baking, to ensure the loaf browns evenly. If it's browning too quickly, loosely cover the loaf with a piece of foil and continue baking until done.
  • Double the glaze recipe if you prefer a thicker glaze.
  • The glaze is optional but recommended.
