Shake up your weeknight dinner rotation with these easy air fryer beef kabobs. Each skewer is stacked with tender steak, fresh veggies and marinated in a flavorful teriyaki sauce for an easy dinner.
Place the steak in a bowl and add the teriyaki sauce and red pepper flakes if using. Marinate for a minimum of 30 minutes or up to 24 hours. Cover and refrigerate if marinating for more than 30 minutes.
If using wood skewers, soak them in water for 15-20 minutes while the meat is marinating.
Cut the onion and peppers into 1”-inch pieces.
Remove the steak from the marinade and cut into 1-inch pieces. Reserve the leftover marinade.
Preheat the air fryer to 400 degrees F.
Start assembling the skewers: begin with a pepper slice, then an onion slice and a piece of steak. Repeat until the skewer is full. Leave a little room at the end of each skewer to make it easier to pick up. Continue until you've used up all the meat and veggies.
Lightly grease the air fryer basket and add kabobs in a single layer. Leave a little bit of room between the skewers.
Drizzle or brush the reserved marinade on the the kabobs.
Cook the skewers for 10 minutes for medium, turning at the halfway point.
Transfer kabobs from the basket to a plate, tent with foil and let rest for 5-10 minutes.
Garnish kebabs with sesame seeds and chopped green onions if using.
Serve with steamed rice or lettuce leaves for wraps.
Notes
Make sure the 6" wooden skewers fit your air fryer basket before you start assembling them. If they're too big trim them to fit.
For best results, allow steak to sit at room temperature for 20-30 minutes before cooking.
We like our steak at a medium temperature (about 10 minutes cooking time). Use a meat thermometer to check for doneness. Rare: 120-125°F, Mediumrare: 130-135°F, Medium: 140-145°F, Mediumwell: 150-155°F, Well: 160-165°F.
Store cooled leftovers in an airtight container for 2-3 days. To reheat in the air fryer: cook at 350 degrees F for a couple minutes until heated through. If reheating in the microwave it's best to remove the skewers before heating.
