Heat the olive oil in a large skillet over Medium heat.
Add the sliced green pepper, onion, and mushrooms and cook until softened. Using a spoon, remove the cooked pepper, onion, and mushroom mixture from the skillet and set aside.
In the same skillet, add the ground beef, minced garlic, salt, and pepper. Brown until cooked through.
Sprinkle the flour over the ground beef, then stir in the broth. Continue cooking for about 5 minutes, stirring often, until a gravy-like sauce forms.
Heat the oven to 350° F and line a half baking sheet with parchment paper.
Place the bottoms of the slider buns on the baking sheet in a single layer. Spoon about 2 tablespoons of the ground beef onto each of the bun bottoms.
Then add about ¼ cup of the veggie mixture on top of the ground beef and top with a slice of provolone. Place the tops of the buns over the cheese.
In a microwave safe bowl, melt the butter.
Stir or whisk in the minced garlic, salt, pepper, and parsley into the butter until combined.
Use a pastry or basting brush to generously coat the tops of the slider buns with the garlic butter glaze.
Place the sliders into the oven and bake for 6-8 minutes or until the tops of the buns are browned and the cheese is melted.
Allow to cool for 1-2 minutes before serving.
Notes
Substitutions:
Use red or yellow peppers in place of green pepper.
Substitute white American, mozzarella or Cheese Whiz for the provolone.
Use Hawaiian rolls in place of slider buns.
For a softer sandwich, cover the sliders with foil before baking.
These are best eaten freshly cooked but you can store leftovers in the refrigerator for a couple of days.
Make ahead tip: cook the veggies and ground beef a day ahead of time and store separately. Assemble sliders and cook as directed when ready to serve.
