Air fryer artichokes are roasted to perfection and make an simple appetizer or delicious side dish. Elevate the dish by serving with a side of our easy homemade aioli sauce.
Prepare the sauce by combining the aioli ingredients in a bowl and stirring to combine. Set aside or refrigerate until ready to serve.
Artichokes
Preheat air fryer to 350 degrees F.
Prepare your artichoke by cutting down the stem to ½ - ¾ inch and removing the tough outer leaves. Remove the top ¾ inch of the artichokes. Trim the tip off each remaining artichoke leaf with kitchen shears. Cut artichoke in half from top to stem.
Remove the choke (inedible small hair-like pieces at the center of the heart) by scraping out with a spoon. This step can also be done after cooking if preferred.
Squeeze a little lemon juice on the cut side of the artichoke hearts to keep them from turning brown.
Brush olive oil over both sides of the artichoke halves. Season the cut side with salt, pepper and garlic powder.
Place seasoned artichokes cut side down in the air fryer basket and cook for 6 minutes. Flip and cook for 4 more minutes. Test a leaf for doneness.
Carefully remove cooked artichoke hearts from air fryer and allow to cool for a couple minutes before serving with aioli sauce.

Cooking time is per batch.
You may need to adjust cooking times based on the size of your artichokes.
Can be served hot or cold.
Although best eaten fresh, leftovers can be refrigerated for up to 5 days.
