Serve this easy air fried roasted carrot recipe for a quick weeknight dinner side dish. Made with 4 ingredients and ready in 15 minutes it's sure to be a family favorite!
Melt the butter in the microwave or on the stove top.
4 tablespoons butter
In a large bowl whisk together the melted butter, brown sugar, and cinnamon.
2 tablespoons brown sugar, 1 tablespoon ground cinnamon
Add carrots to the butter mixture and toss until evenly coated.
1-1 ½ pounds baby carrots
Grease the air fryer basket with oil and place carrots in the basket.
Cook for 10 minutes or until tender, tossing halfway through.
Notes
Make sure the carrots are dry before adding to the butter mixture. If they are wet the glaze won’t adhere to the carrots and they won’t be as crispy.
You can use regular or rainbow carrots with this recipe. Just cut them in half, into coins or chunks and adjust the cooking time based on the size of the carrots.
Oven directions: Preheat oven to 400 degrees F. Line a sheet pan with parchment paper and set aside. Prep carrots as directed and place on the prepared sheet pan. Cook for 15-20 minutes or until carrots are tender.
Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat in the microwave or air fryer at 350 degrees F for 5-7 minutes.
