These soft, cake-like pumpkin cookies start with a spice cake mix and get an extra boost of fall flavor from pumpkin puree and pumpkin pie spice. With just 10 minutes of prep, they're handy when you're craving a pumpkin treat without a lot of fuss.
Heat the oven to 350°F. Cover two baking sheets with parchment paper or lightly grease them.
Add the cake mix, pumpkin puree, egg, oil, vanilla and pumpkin pie spice to a large mixing bowl. Stir until the the ingredients come together into a soft dough.
1 15.25-ounce box spice cake mix, 1 cup canned pumpkin puree, 1 large egg, 1/4 cup vegetable oil, 1 teaspoon vanilla extract, 1 teaspoon pumpkin pie spice
Gently stir in the white chocolate chip and chopped nuts, if you're adding them.
1/2 cup white chocolate chips, 1/2 cup chopped pecans or walnuts
Portion about 1½ tablespoons of dough per cookie onto the prepared pans, leaving about 2 inches between each one.
Bake for 10-12 minutes. The cookies are ready when the tops are set and edges are lightly golden. The centers should still be soft.
Leave the cookies on the baking sheet for 5 minutes, then move them to a wire rack to finish cooling.
Notes
Make sure you're using pumpkin puree, NOT pumpkin pie filling.
Don't overmix the batter or the cookies will be dense.
Leave 2 inches between the dough balls so they have room to spread out.
Check on the cookies at the 10 minute mark - the tops should be set with golden edges.
Don't skip letting the cookies cool on the pan for 5 minutes - it gives them time to set up before moving to the rack.
Store cookies at room temperature in an airtight container for up to 3 days or you can store in the refrigerator for up to 1 week.
