Make crispy breaded zucchini chips in the air fryer! Made with simple ingredients and ready in 20 minutes, the whole family will love these crunchy, cheesy bites. Perfect for a quick snack or appetizer.
Set up your dredging station. In three separate bowls add:Flour, salt & pepper, and paprika. Mix together.Eggs, beaten.Breadcrumbs and parmesan cheese
½ cup all-purpose flour, 2 teaspoons paprika, ½ teaspoon salt, ¼ teaspoon black pepper, 2 eggs, 1½ cups panko breadcrumbs, ¼ cup finely grated parmesan cheese
Preheat the air fryer at 400°F for 5 minutes.
Dip zucchini slices first in the flour mixture, then egg, and ending with the breadcrumbs and place on a baking rack. Continue until all the slices have been coated.
Place a single layer of breaded zucchini chips in the bottom of the air fryer basket and lightly spray with vegetable or avocado oil.
Fry at 400°F until the chips are crispy and browned (about 6-8 minutes), turning them halfway through.
Remove rounds from the air fryer and season with additional salt and pepper if desired.
Serve immediately with your favorite dipping sauce.
Notes
Swap out crushed pork rinds for the panko crumbs for a low carb option.
Using a mandolin slicer will give you uniform thickness and allows for even cooking. If using a knife, try to make the slices as evenly sized as possible.
Don't crowd the air fryer basket - you may need to cook in batches depending on the size of your air fryer.
Serve with your favorite dipping sauce: ranch, sriracha mayonnaise or BBQ sauce.
While these are best eaten freshly cooked, you can store leftovers in an airtight container in the refrigerator for up to 2-3 days. Reheat in the air fryer until heated through and crispy.
