Pour cold water into large bowl. Add salt and stir until salt is dissolved.
Thinly slice the potatoes to ⅛ inch thick.
Soak the potatoes in the salted water for 30 minutes.
Drain the potatoes and pat dry with paper towel.
Preheat the Air Fryer to 330°F for 5 minutes.
Add potato slices to large bowl and drizzle with olive oil. Stir to coat.
Layer the potatoes in a single, even layer in the preheated air fryer.
Cook the potatoes at 330°F for 20-25 minutes or until desired browning. Shake the basket halfway through cooking.
Season the potatoes with salt when done cooking, if using.
Remove chips from fryer basket & serve immediately with your favorite dipping sauce.
Notes
Soaking: draws out the starch, which makes for crunchier chips. It also helps to keep the chips from sticking together.
Drying: it’s important to dry the potatoes well before cooking. Line a large cookie sheet with paper towels and layer the potatoes between sheets of paper towels.
Use potatoes that are a similar size for best results.
Layering slices in a single, even layer takes a little longer to cook, but the chips will cook more evenly.
