Homemade Potato Chips in the Air Fryer

These Homemade Potato Chips made in the air fryer are easy to make and come out crispy every time. Perfect for a crunchy snack or an easy side dish. 

One thing I always have on hand is potatoes. They are a go-to ingredient because you could eat potatoes every night and cook them a different way each time.

I am notorious for planning to make an easy meal that would go great with french fries, and then forgetting to buy the fries at the store. Just me?!

Ever since I got my air fryer, I donโ€™t have to worry about that anymore! We have actually grown to like air-fried potato chips almost better than fries (almost – lol). If you’re looking for another crunchy snack, try our ranch roasted chickpeas.

What You Need To Make Potato Chips in the Air Fryer 

Ingredients

Cold water 

Salt 

Potatoes

Olive oil

Kitchen Gadgets

Air Fryer – We actually have 2 air fryers, but my favorite is the Cosori

Mixing Bowl – to soak the potatoes in

Parchment Paper Liners – These are optional, but they make cleanup so easy. They are pieces of parchment paper that are sized to fit your air fryer. The liners have holes in them to allow the air to circulate for even cooking.

Oil Spritzer – Not all air fryer recipes call for or need extra oil, but it helps to crisp things up. Having a spritzer or mister on hand is really convenient and keeps you from overusing the oil. 

Mandolin – Some people arenโ€™t comfortable using this gadget, but as long as you are very careful and use the slicing guard, it makes slicing easy. I like to use it because it keeps the slices equal in thickness, which helps the chips to air fry evenly. 

How To Make Homemade Potato Chips in the Air Fryer 

Add the cold water and salt to a medium-size mixing bowl, and stir until the salt is dissolved.

Slice your potatoes โ…› inch thick. Add them to the salted water and soak for 30 minutes. 

Drain the potatoes and dry well on paper towels before air frying.

Add the sliced potatoes to a large bowl, drizzle with a bit of oil and toss to coat. Add the chips to the air fryer basket in a single layer. 

Cook the potato chips for 20-25 minutes at 330 degrees or until they are crispy. Be sure to turn the chips with tongs or shake the basket halfway through.

Sprinkle with salt if desired and serve immediately with your favorite dipping sauce. 

Tips for Making Air Fried Chips 

Donโ€™t overload the basket! The food may cook unevenly and some foods may turn out soggy. Additional cooking time may be needed as well.

For crispy chips, donโ€™t forget to soak the potatoes. This pulls out the starch and makes your chips crunchier and keeps them from sticking together.

Itโ€™s super important to dry the potatoes before air frying. If they retain a lot of moisture it will release in the cooking process, which could lead to soggy chips. 

For best results, cook your homemade chips in a single layer. While this takes longer and you’ll need to make more batches, it does cook them more evenly.

  • 8 cups cold water
  • 1 tablespoon Kosher salt
  • 2 large russet potatoes, sliced to โ…› inch thick
  • 1 tablespoon olive oil

Serving Options:

  • Salt to taste
  • Fresh parsley, chopped
  • French onion dip
  • Chip dip, your favorite
  • Ketchup

Instructions

  • Pour cold water into large bowl. Add salt and stir until salt is dissolved.
  • Thinly slice the potatoes to โ…› inch thick.
  • Soak the potatoes in the salted water for 30 minutes.
  • Drain the potatoes and pat dry with paper towel.
  • Preheat the Air Fryer to 330ยฐF for 5 minutes.
  • Add potato slices to large bowl and drizzle with olive oil. Stir to coat.
  • Layer the potatoes in a single, even layer in the preheated air fryer.
  • Cook the potatoes at 330ยฐF for 20-25 minutes or until desired browning. Shake the basket halfway through cooking.
  • Season the potatoes with salt when done cooking, if using.
  • Remove chips from fryer basket & serve immediately with your favorite dipping sauce.

Notes

  • Soaking: draws out the starch, which makes for crunchier chips. It also helps to keep the chips from sticking together.
  • Drying: itโ€™s important to dry the potatoes well before cooking. Line a large cookie sheet with paper towels and layer the potatoes between sheets of paper towels.
  • Use potatoes that are a similar size for best results.ย 
  • Layering slices in a single, even layer takes a little longer to cook, but the chips will cook more evenly.
  • Optional serving sauces are not included in the nutritional calculations.
