Make filet mignon and potatoes in the air fryer for a dinner full of flavor and texture. It's cooked to perfection, tender, juicy, and everything you look for in an amazing steak dinner.
Remove steaks from refrigerator and allow to come to room temperature (about 30 minutes).
While the steaks are hanging out, let’s prepare the potatoes. Preheat the air fryer to 400° F.
Cut the baby potatoes in half, season with salt and pepper to taste, toss with 1-2 tablespoons of oil and cook for 15 minutes or until soft enough to pierce with a fork. Remove from basket, tent with foil & set aside.
Combine the salt, pepper, thyme and parsley in a small bowl and stir to combine.
After the steaks have reached room temp, season them on all sides, pressing it into the meat. Place seasoned steaks in a pan and brush them with oil.
Place pan in the air fryer and cook for 10-15 minutes until desired doneness is reached (see chart below). Steaks will continue to cook after removing from heat source so remove them at 5 degrees less than desired temperature.
Remove steaks to a plate and tent with foil, allowing them to rest for 10 minutes before slicing. Slicing too soon will result in the juices escaping rather than absorbing into the meat.
Serve with a pat of butter to melt over the steaks for extra flavor if desired
Don’t skip bringing the steaks to room temp because it allows for a more even cook on the steaks.
Use a meat thermometer to check for doneness.
Filet mignon is a very tender cut of beef and if you cook it beyond Medium it may dry out or be tough. These are doneness ranges: Rare temp: 120-125°F - 10-12 minutes Medium. rare: 130-135°F - 11-13 minutes Medium: 140-145°F - 12-14 minutes Medium well: 150-155°F - 13-15 minutes Well: 160-165°F - 14-16 minutes
Can substitute other vegetables for the potatoes for a low carb option.
Make sure your pan fits in the basket.
Store leftovers in an airtight container for 3-4 days. Reheat in air fryer for 7-8 minutes at 350 degrees F or slice and reheat in a skillet on the stove.
