Combine all the sauce ingredients in a medium bowl and stir to combine. Store in the refrigerator while you prepare the hamburgers.
1 cup plain Greek yogurt, 1/2 cup cucumber, juice of half a lemon, 1 tablespoon olive oil, 1/2 tablespoon fresh or dried dill, 1/4 teaspoon sea salt, 1/4 teaspoon fresh ground black pepper
Beef Patties
Prep the onion and herbs.
½ cup red onion, 1 tablespoon chopped fresh parsley, ½ tablespoon chopped fresh dill
In a large mixing bowl, combine the ground beef with the onion, feta, olive oil, parsley, dill, garlic powder, oregano, salt, and pepper. Mix thoroughly.
1 pound lean ground beef, ¼ cup crumbled feta cheese, 2 tablespoons olive oil, 1 teaspoon garlic powder, ½ teaspoon dried oregano, ½ teaspoon kosher salt, ¼ teaspoon black pepper
Divide the mixture into 4 equal portions and form into patties.
Pan fry over medium-high heat for 5-7 minutes per side, depending on your desired level of doneness.
Remove from heat and allow to rest for 5 minutes.
Serve on buns with tzatziki and crumbled feta. Garnish with fresh greens, sliced cucumber, and additional red onion if desired.
Optional: buns, sliced cucumber, onion and additional crumbled feta for serving
Notes
I used a lean 93/7 ground beef for this recipe.
Replace the herbs & spices with a pre-made Greek seasoning blend if preferred.
You can omit the olive oil in the beef mixture if you are using a fattier ground beef blend. I do recommend using it for the leaner blends because it yields a juicier, tastier burger.
To ensure that they cook evenly, make an indentation with your thumb in the middle of each patty before cooking.
If you prefer to use a grill, cook for 2-3 minutes per side until cooked to desired doneness (140-145 degrees F is medium doneness).
Store leftovers covered in the fridge for 2-3 days. Reheat in the microwave or in a pan over medium heat.
