This Grinch-inspired treat has all of the traditional flavors of rocky road candy, but is bright green for the Christmas and holiday season! But the best part is you'll need just 5 ingredients and less than 30 minutes to make a batch, making it perfect for a last minute dessert.
Line a baking sheet with parchment paper and set aside.
Place the candy melts in a microwave-safe medium bowl and microwave them on High for 3 minutes or until smooth and creamy. Stir every 30 seconds during the cooking process to keep the candy melts from burning.
Add the coconut oil and stir until combined.
Next add the marshmallows and almonds, gently stirring until they’re fully coated.
Spoon candy in big, heaping spoonfuls onto the prepared baking sheet.
Immediately add a red heart to each piece of candy.
Place in the fridge to chill until hardened, about 10 minutes.
Notes
If the melted chocolate is too thick, stir in a bit more coconut oil until you reach the desired consistency.
If you can’t find the vibrant green candy melts, substitute with any shade of green, or use white candy melts with a green oil-based food dye.
We like to use almond slivers instead of whole almonds because the candies are easier to eat with the smaller-sized nuts.
Feel free to customize this recipe. You can reduce the amount of marshmallows or almonds and substitute with the same amount of other ingredients. Pecans, walnuts, pistachios, dried fruits and candied fruits will all work here.
To make rocky road candy for other holidays, substitute with different colored melts.
Store candies in an airtight container in the refrigerator for up to 1 week. While you can also store them in a cool, dry pantry they won’t keep as long.
