Grinch Rocky Road Candy Ingredients
- candy melts – I used the vibrant green color but any green will work
- coconut oil
- mini marshmallows
- almond slivers
- large red candy heart sprinkles

How to Make Grinch Themed Candy Clusters
Prep your baking sheet by lining it with parchment paper and set it aside.
Using the microwave, heat the candy melts in a microwave-safe bowl for 3 minutes, stirring at 30 second intervals, until the desired consistency is reached.
Stir in the coconut oil until combined.
Mix in the almonds and marshmallows until they are completely coated with the melted chocolate mixture.
Drop spoonfuls of candy clusters on the prepared baking sheet, then quickly add a red heart sprinkle before the chocolate sets.
Chill in the fridge for 10 minutes before serving!
Tips for Making Nut Clusters with Marshmallows
- When melting the chocolate, make sure you stir it every 30 seconds to keep it from seizing up or scorching.
- Stir in additional coconut oil if you find the melted chocolate is too thick.
- Bite-sized marshmallows work best in this recipe.
- Using almond slivers makes it easier to eat the candy, but you can use whole almonds if preferred.
- Mix quickly but gently – work quickly so the chocolate doesn’t set up and gently so the marshmallows and nuts don’t break apart.
Recipe Substitutions and Variations
- You can use any shade of green you prefer for the candy melts.
- If you can’t find green candy melts it’s easy to DIY the chocolate by adding green oil-based food coloring to white chocolate or candy melts.
- Substitute other kinds of nuts in an equal amount. Pecans, walnuts and pistachios can be swapped for the almonds.
- Dried fruits and candied fruits can be used.
- Use this rocky road candy recipe for other holidays by swapping out the candy melts for a different color.
- For a fancier look, you can add the candy mixture to different shaped silicone molds.
- Have leftover candy melts? Make more Grinch favors! Try dipping pretzels, Ritz crackers stuffed with peanut butter, ends of Rice Krispie treats, Oreos, or truffles!
How to Store Leftover Rocky Road Candy
Keep leftover candies in an airtight container in the refrigerator for up to one week. Remove the nut clusters from the frig a few minutes before serving. The candies can also be kept at room temperature in the pantry but they won’t stay fresh as long.

Grinch Rocky Road Candy Clusters
Ingredients
- 12 ounces green candy melts
- 1 tablespoon coconut oil
- 2 cups mini marshmallows
- ½ cup almond slivers
- large red heart sprinkles
Instructions
- Line a baking sheet with parchment paper and set aside.
- Place the candy melts in a microwave-safe medium bowl and microwave them on High for 3 minutes or until smooth and creamy. Stir every 30 seconds during the cooking process to keep the candy melts from burning.
- Add the coconut oil and stir until combined.
- Next add the marshmallows and almonds, gently stirring until they’re fully coated.
- Spoon candy in big, heaping spoonfuls onto the prepared baking sheet.
- Immediately add a red heart to each piece of candy.
- Place in the fridge to chill until hardened, about 10 minutes.
Notes
- If the melted chocolate is too thick, stir in a bit more coconut oil until you reach the desired consistency.
- If you can’t find the vibrant green candy melts, substitute with any shade of green, or use white candy melts with a green oil-based food dye.
- We like to use almond slivers instead of whole almonds because the candies are easier to eat with the smaller-sized nuts.
- Feel free to customize this recipe. You can reduce the amount of marshmallows or almonds and substitute with the same amount of other ingredients. Pecans, walnuts, pistachios, dried fruits and candied fruits will all work here.
- To make rocky road candy for other holidays, substitute with different colored melts.
- Store candies in an airtight container in the refrigerator for up to 1 week. While you can also store them in a cool, dry pantry they won’t keep as long.
