Serve this crave-worthy popcorn for game day parties or your next movie night. Ready in 15 minutes, the salty sweet mix is made with buttery popcorn, gooey marshmallows, rich chocolate and crunchy graham crackers.
Line a baking sheet with parchment paper and set aside.
How to Make the Popcorn
You can make the popcorn on the stovetop or in the Instant Pot. I've included Instant Pot directions here.
Set the Instant Pot to Sauté mode. Once it’s hot, add the butter and melt.
½ cup butter
After the butter has melted, add the popcorn kernels and salt, stirring well to coat the kernels.
½ cup popcorn kernels, pinch of salt
Place the lid on the Instant Pot. Once the popping has stopped for at least 20 seconds, press Cancel on the control panel and carefully remove the lid. Transfer the popcorn to a mixing bowl, sifting out any unpopped kernels. Season with additional salt if desired.
How to Make the S'mores Popcorn Mix
Place chocolate melting wafers in a small microwave-safe bowl. Microwave in 30 second intervals, stirring with a spoon in between cycles, until melted.
12 ounces white chocolate melting wafers or bark
Pour the melted chocolate over the popcorn. Gently stir until the popcorn is evenly coated in chocolate. Transfer coated popcorn to the prepared baking sheet.
Immediately add the marshmallows, chocolate chips, and graham crackers, working quickly before the chocolate hardens and sets up. Gently mix until evenly distributed.
1/2 cup mini marshmallows, 1/2 cup mini milk chocolate chips, 2 sheets graham crackers
Allow popcorn mixture to cool on the counter at room temperature. Can also be placed in the refrigerator to speed up the cooling process.
Notes
Make sure your popcorn is fresh or it may not fully pop.
Feel free to add more marshmallows, chocolate chips or graham crackers.
A 1/2 cup of popcorn kernels will yield between 8-15 cups of popped corn, depending on the variety used.
This mix is best eaten the day it’s made but can be stored for 1-2 days in an airtight container or ziptop bag (squeeze excess air out before sealing). The popcorn will soften up while it’s stored but it will still taste great.
