Homemade S’mores Popcorn Recipe

Make this smores popcorn recipe from scratch for a fun and tasty snack! You can have ooey gooey, sweet and salty popcorn in just 15 minutes! 

This easy recipe features all the things you love about traditional s’mores – gooey marshmallows, crunchy graham crackers and rich chocolate. And when you add these ingredients to buttery popcorn it’s a snack-lover’s dream.

Every time I think of smores treats it just takes me back to childhood bonfires and to all the times we used to make them with our kids. The hubby would drag out the fire pit and build a fire, then we’d roast marshmallows. 

When the kids were little, it could be challenging to keep the melted marshmallows on the sticks – who knows how many we lost. And if you have kids I’m sure you know exactly what I’m talking about! 

Since then I’ve come up with several ways to enjoy this sweet treat without all of the work or building a fire! 

Skillet smores dip is much easier to make and almost mess-free so we love serving it at parties. Or try a batch of no bake s’mores Rice Krispy treats or s’mores cupcakes with marshmallow frosting – they’re pretty dang good and hit the spot when a sweet tooth craving hits.

So this time I’m combining sweet and salty with one of my favorite snacks, popcorn! This would be a tasty recipe to serve at parties, on your next movie night, or as a tasty snack on game day.

S’mores Popcorn Ingredients Needed

  • Popcorn kernels – the crunchy base
  • White chocolate melting wafers or bark – adds sweetness and creaminess and helps the other ingredients bind to the popped corn
  • Marshmallows – we used mini marshmallows for this mix
  • Mini milk chocolate chips – for that classic s’mores vibe
  • Graham crackers – add crunch to the mix
  • Miscellaneous: butter and a pinch of salt

How To Make Homemade Popcorn (Stovetop and Pressure Cooker) 

Before making the popcorn, line a baking sheet with parchment paper and set aside. 

Stovetop Instructions

To make popcorn on the stove top, add the butter to a large pot and let it melt over medium heat. Then pour in the popcorn kernels and coat well. Cover and watch it pop! Once the popping has stopped for at least 20 seconds, you can remove the pot from the heat.

Instant Pot Instructions 

Set the Instant Pot to Saute and melt the butter. Add the kernels and stir to coat, then secure the lid in place. After it has stopped popping for 20 seconds, press Cancel and take the lid off. 

How to Make Popcorn with Chocolate, Marshmallows and Graham Crackers

Transfer the popcorn to a large bowl and remove any unpopped popcorn kernels.

Melt the chocolate in the microwave in 30 second increments, stirring after each cycle, until melted. 

Pour the melted chocolate over the popcorn and stir. Transfer the mixture to the lined baking sheet.

Add the marshmallows, chocolate chips, and graham crackers before the chocolate hardens. 

Mix so all of the ingredients are evenly distributed. 

Allow the s’mores popcorn to cool on the counter or place it in the fridge for a few minutes to speed up the cooling process. 

Tips for Making the S’mores Popcorn Recipe

  • Fresh popcorn is the best. If your kernels are old, they may not pop all the way. 
  • Sift out any unpopped kernels before making the popcorn mixture. 
  • If you don’t want to make popcorn from scratch, you can use store-bought bagged popcorn or microwave popcorn.

Recipe Substitutions and Variations

  • Add more chocolate, marshmallows, or graham crackers if desired.
  • For extra crunch, add crushed pretzels or roasted peanuts.
  • For a holiday version, substitute crushed candy canes and dark chocolate chips for the graham crackers and milk chocolate.

How to Store Leftover Popcorn S’mores

While this popcorn mix is best eaten the day it was made, it will keep for 1-2 days when stored in airtight container on the counter. The popcorn may soften up but should still taste yummy.

  • Line a baking sheet with parchment paper and set aside.

How to Make the Popcorn

  • You can make the popcorn on the stovetop or in the Instant Pot. I've included Instant Pot directions here.
  • Set the Instant Pot to Sauté mode. Once it’s hot, add the butter and melt.
    ½ cup butter
  • After the butter has melted, add the popcorn kernels and salt, stirring well to coat the kernels.
    ½ cup popcorn kernels, pinch of salt
  • Place the lid on the Instant Pot. Once the popping has stopped for at least 20 seconds, press Cancel on the control panel and carefully remove the lid. Transfer the popcorn to a mixing bowl, sifting out any unpopped kernels. Season with additional salt if desired.

How to Make the S'mores Popcorn Mix

  • Place chocolate melting wafers in a small microwave-safe bowl. Microwave in 30 second intervals, stirring with a spoon in between cycles, until melted.
    12 ounces white chocolate melting wafers or bark
  • Pour the melted chocolate over the popcorn. Gently stir until the popcorn is evenly coated in chocolate. Transfer coated popcorn to the prepared baking sheet.
  • Immediately add the marshmallows, chocolate chips, and graham crackers, working quickly before the chocolate hardens and sets up. Gently mix until evenly distributed.
    1/2 cup mini marshmallows, 1/2 cup mini milk chocolate chips, 2 sheets graham crackers
  • Allow popcorn mixture to cool on the counter at room temperature. Can also be placed in the refrigerator to speed up the cooling process.

Notes

  • Make sure your popcorn is fresh or it may not fully pop.
  • Feel free to add more marshmallows, chocolate chips or graham crackers.
  • A 1/2 cup of popcorn kernels will yield between 8-15 cups of popped corn, depending on the variety used.
  • This mix is best eaten the day it’s made but can be stored for 1-2 days in an airtight container or ziptop bag (squeeze excess air out before sealing). The popcorn will soften up while it’s stored but it will still taste great.
