Ingredients

  • 16 oz. linguine
  • 1 lb. of ripe tomatoes medium chop
  • 1 large onion thinly sliced
  • 5-6 garlic cloves - sliced thin
  • 1 tsp. dried basil
  • 2 tbsp. olive oil
  • 2 tsp. kosher salt
  • 1/2 tsp. cracked black pepper
  • 4 1/2 cups water
  • Optional for serving: ¬†additional olive oil salt & pepper, Parmesan cheese

Instructions

  • Add everything except the optional serving ingredients to a large pot and bring to a boil. Continue to boil over high heat, turning/stirring the pasta frequently until the pasta is al dente & most of the liquid has been absorbed (about 10 minutes).
  • Season individual servings with additional olive oil, salt, pepper & Parmesan if desired.
