I’m sure you’ve had days where you suddenly find yourself with a few hungry kiddos in your kitchen. Enter Flourless Peanut Butter Cookies. You can have a batch of homemade cookies ready in about 20 minutes. Mom for the win!
Today is National Peanut Butter Cookie Day. You knew that, right? In honor of this special day, I am sharing a recipe I found on Pinterest.
If you have been sucked into the vortex of Pinterest spent any time on Pinterest, you’ve likely seen pins for Flourless Peanut Butter Cookies or 3-Ingredient Peanut Butter Cookies. Same basic recipe, different name.
Intrigued with the idea of limited ingredients and hot cookies in 20 minutes, I had to give it a try myself.

Benefits of Flourless Peanut Butter Cookies:
- Recipe uses a limited number of basic ingredients that you likely have on hand.
- In less time than it takes to drive to the grocery store, you can be enjoying warm cookies.
- Perfect for a last minute snack idea.
- Easy clean-up.
Drawbacks of Flourless Peanut Butter Cookies:
- My personal preference is a chewier cookie, like peanut butter cookies with white chocolate chips. This recipe produces a crunchy cookie.
- It’s a small batch of cookies (maybe that’s a good thing?!).
After making this recipe a few times, Flourless Peanut Butter Cookies have earned a permanent spot in my recipe box. Limited ingredients and speedy preparation make this recipe a keeper.
Having said that, I’m still keeping my original recipe for those days when I have more time on my hands and can make a full batch of cookies. I do prefer the softer cookie my standby recipe produces, but I don’t always have the time required to make a full batch.

Helpful Tips:
- Be careful not to overcook or you will end up with very crunchy cookies.
- We think these are best eaten the same day you bake them. If you do have leftovers, store in an airtight container.
- Optional add-ins (1 tsp. vanilla or chocolate chips) may also be added. While I’ve tried both, we prefer these cookies without the extra ingredients.
I haven’t been able to determine the origins of this recipe due to the multitude of sources I located on the interwebs.

FLOURLESS PEANUT BUTTER COOKIES
Ingredients
- 1 cup sugar
- 1 cup peanut butter
- 1 egg
Instructions
- Preheat oven to 350 degrees. Line a cookie sheet with parchment paper or a baking mat.
- In a medium bowl, mix all ingredients until smooth.
- Using a small cookie scoop or a spoon, scoop dough onto parchment lined cookie sheet. To make the criss-cross pattern, press down with the bottom of a fork, turn the cookie a quarter turn and press down again with the bottom of the fork.
- Bake for 10-12 minutes. Allow to cool on the pan for 2 minutes, then transfer to a wire rack to finish cooling.
