This marshmallow cereal treat is my go-to recipe when I need to whip up something at the last minute or use up leftover Rice Krispies or Cocoa Krispies. Sometimes I alternate the chocolate version with these Fruity Pebbles Rice Krispie treats.
I even have a heart shaped Rice Krispie treats and Cadbury mini egg Rice Krispie treats that are pretty tasty and perfect for parties. PS…if you like s’mores I also have a skillet dip that is to die for.

While there may be a ton of recipes out there, my favorite thing about this one is that you don’t have to turn the stove on. That’s right – we are melting everything in the microwave and cleanup is a breeze.
Ingredients Needed
- mini marshmallows – make sure they are fresh
- unsalted butter – do NOT use margarine!
- chocolate chips – use a high quality chocolate (dark, milk, or white)
- unsweetened cocoa powder – this is the brand I use
- Rice Krispies cereal
- Chocolate jimmies sprinkles
- Nonstick cooking spray

How to Make the Best Chocolate Rice Krispie Treats
Grease a large spoon and a 10 x 7 baking pan with nonstick spray and set aside.
In a large microwave safe bowl, combine the butter and marshmallows. Microwave for 2 minutes, remove from microwave and stir constantly until smooth.
Immediately add the chocolate chips and stir until melted.
Mix in the cocoa powder until incorporated.
Fold in the cereal and stir until all ingredients are mixed well.
Pour into the baking pan and spread evenly. Press gently with the spoon until the treats are packed. Tip: place a sheet of parchment paper over the treats before pressing them down.
Top with sprinkles and press them down into the treats.
Cover with plastic wrap and let them set for 3-4 hours before cutting.
Tips for making Rice Krispy cereal treats
- For easiest melting and best tasting treats, use the freshest marshmallows.
- Avoid adding more chocolate chips. In this case more is not better. It makes the Rice Krispies hard to bite into once they’ve set up.
- It’s important to work quickly. When the marshmallow mixture is hot, it’s the easiest to work with.
- When it’s time to cut, spray your knife with cooking spray – it will help keep the knife from sticking to the treats. You can also try using a pizza slicer.
- Using a 10×7 pan yields 8 large treats or 16 smaller ones.
- You can use a 9×13 pan but the chocolate Rice Krispies will be thinner. To make them thicker, double the recipe.

Variations
I like using dark chocolate because it has a richer taste but you can use milk chocolate or white chocolate chips if preferred.
For holidays or special occasions, you can dip the ends in chocolate and add sprinkles.
As a fun party treat, cut the rice krispie bars in smaller pieces and add sticks. Wrap in cellophane and tie on a bow using decorative ribbon.
How to Store Cereal Treats
Store in an airtight container on the counter for up to 3 days. That’s when they are the softest but ours never last beyond a day.
Can You Freeze Homemade Rice Krispie Treats?
In the freezer they will stay fresh for about 1 month. Wrap them in a couple layers of plastic wrap, then transfer to a freezer container or freezer bag.

Chocolate Rice Krispie Treats
Ingredients
- 8 cups mini marshmallows
- 4 Tablespoons unsalted butter
- ¼ cup chocolate chips
- ¼ cup unsweetened cocoa powder
- 6 cups Rice Krispies cereal
- Chocolate jimmies sprinkles
- Nonstick cooking spray
Instructions
- Spray a 10×7 pan and a mixing spoon with nonstick spray and set aside.
- Combine the marshmallows and butter in a large microwave-safe mixing bowl.
- Microwave for 2 minutes, then stir vigorously to break down the marshmallows and mix in the butter.
- Immediately add the chocolate chips and stir well again, until they have melted and are fully incorporated.
- Add the cocoa powder and stir until combined.
- Add the cereal and stir well, folding the ingredients over each other until the Rice Krispies are fully coated with the chocolate marshmallow mixture.
- Pour mixture into the prepared pan and spread it out evenly. Press the mixture down gently but firmly until it’s packed and condensed.
- Top with the sprinkles and gently press them into the treats. Cover with plastic wrap and allow to sit for 3-4 hours before cutting.
Notes
- Make sure your marshmallows are fresh for best results.
- Don’t increase the amount of chocolate chips or the treats will be hard to bite.
- Work quickly as you go through the steps – the marshmallow mixture is easier to stir when it’s warm.
- I used dark chocolate because it has a richer flavor but you can use milk or white chips if preferred.
- Spray your knife with nonstick spray for easier cutting.

- You’ll get 8 larger treats or 16 smaller treats with the 10×7 pan.
- If you prefer to use a 9×13 pan, the Rice Krispie treats will be thinner. For thicker treats in a 9×13 pan, double the recipe.
