- Frozen breakfast burritos – I’ve used Red’s and El Monterey but you can use your favorite brand.
- Enchilada sauce – Use either red or green sauce to keep the tortillas from drying out.
- Shredded cheese – Try mild or sharp cheddar or a Mexican blend.
- Optional garnishes – Diced tomatoes, chopped fresh cilantro, salsa, chopped red or green onion or sour cream before serving.

How to Make Breakfast Casserole with Frozen Burritos
Place the unwrapped frozen burritos in the bottom of a baking dish. Top with the enchilada sauce.
Sprinkle a layer of cheese over the burritos then cover the pan with foil.

Put the pan in the oven and bake until the burritos are cooked through and the cheese is melted.
Remove the pan from the oven and add optional toppings if using.

Allow the leftovers to cool before placing in an airtight container then keep in the fridge for up to 2 days. Individual portions can be reheated in the microwave – I heat in 1-2 minute cycles at 50% power until heated through.

Can I freeze the burrito casserole leftovers?
You probably can, but I haven’t tested it. If you need a smaller portion, try making a half batch instead.
What are good toppings or garnishes for breakfast burritos?
You can use traditional burrito and taco toppings like diced tomatoes, sliced black olives, avocado slices, salsa, sour cream, chopped onion or diced fresh jalapenos for a pop of heat.
How do I know when the burritos are fully cooked?
The best way to check is with an instant-read thermometer – the filling should reach 165°F before serving.

- 8 frozen breakfast burritos
- 10 ounce can red or green chile enchilada sauce
- 1 1/2 cups shredded cheese, cheddar and Mexican blend work well
- Optional garnishes: diced tomatoes, chopped red or green onion, chopped fresh cilantro, salsa, sour cream
Instructions
- Preheat the oven to 375°F. Lightly grease a 9×13-inch baking dish.
- Unwrap the frozen burritos and place them in an even layer in the prepared baking dish.8 frozen breakfast burritos

- Cover the pan tightly with aluminum foil and bake for 25-30 minutes. Carefully remove the foil and continue baking for an additional 10 to 15 minutes.
