In fact, this chewy cookie is so good it may become your new favorite cookie! They’re perfect for a lunchbox treat, an after-school snack or easy dessert.

While nothing beats a fire-roasted s’more, sometimes you want a treat that’s a little less messy. And that’s where our easy s’mores cookie recipe comes in handy.

Now you can enjoy s’mores flavors anytime a craving hits without even having to step outside. I love making cookies in my air fryer, like these hot chocolate cookies with mini marshmallows. I’m also sharing instructions to bake them in the oven if that’s your preference.

This cookie recipe uses pantry staples, along with traditional s’mores ingredients. Your kids are going to fall in love with these so be prepared to make multiple batches.

Ingredients Needed 

  • butter – allow time for the butter to soften to room temperature before using
  • brown sugar
  • granulated sugar
  • eggs – let them come to room temperature
  • vanilla extract
  • all-purpose flour
  • salt
  • cornstarch
  • baking soda 
  • semi-sweet chocolate chips
  • mini marshmallows
  • whole graham crackers – coarsely crushed
  • Hershey chocolate bars – we used the fun-sized bars, broken in pieces

How to Make Chewy Smores Cookies (in the air fryer) 

Preheat the air fryer to 350 degrees F. 

In a large bowl, use an electric hand mixer to cream together the softened butter and sugars. 

Mix in the eggs and vanilla just until combined.

In separate bowl, whisk together the flour, baking powder, salt, and cornstarch. 

Slowly add the dry ingredients into the sugar mixture, stirring after each addition.

Fold in the chocolate chips, 1.5 cups of marshmallows, ¾ cup of the graham cracker crumbs, and half of the broken candy bars. 

Place a parchment paper liner in the air fryer basket and lightly spritz with oil. 

Use a cookie scoop to make cookie dough balls (about 1.5 tablespoons of dough for each cookie). Place the dough in the basket, making sure to leave space in between each dough ball.

Air fry for 8 minutes. 

Pull out the basket and top each cookie with 1 to 2 marshmallows, graham cracker pieces, and chocolate chunks. 

Continue cooking for an additional 3 minutes or until the tops of the cookies are golden brown. 

Allow the smores cookies to cool in the basket for 3 minutes then transfer them to a wire rack to finish cooling.

Oven Baked Smores Cookies 

Follow the same instructions for mixing the cookie dough. Line a baking sheet with parchment paper. Bake the cookies for 8-12 minutes at 350 degrees F.

Allow them to cool on the pan for a couple minutes before transferring to a baking rack to finish cooling. 


Tips for Making


  • For thicker cookies: scoop cookie dough and chill for 30 minutes before cooking. 
  • If you are using large marshmallows, cut them into smaller pieces. 
  • Wait to place the parchment liner in the air fryer until after it’s preheated and you’re ready to put the dough balls in the basket.
  • If you like a little char on your marshmallows (that would be me!), use a small kitchen torch to toast the marshmallows after you’ve removed cookies from the air fryer.

Variations

  • Use dark chocolate or milk chocolate chips in place of the semi-sweet chocolate if preferred.
  • If you don’t have the mini Hershey bars feel free to use the larger bars.
  • You can also add in nuts or shredded coconut for a fun twist.

How to Store

  • Keep completely cooled leftover cookies in an airtight container on the counter for up to 4 days. 
  • To freeze, place the cooled cookies in a freezer bag and freeze for up to 1 month. Thaw at room temperature before serving.

Ingredients

  • 1 cup butter, (2 sticks) softened, room temperature
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon salt
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • 1 cup semi-sweet chocolate chips
  • 2 cups mini marshmallows, divided
  • 2 cups graham crackers, coarsely crushed, divided
  • 10 fun-size Hershey chocolate bars, divided

Instructions

  • Preheat air fryer to 350 degrees F.
  • Cream together butter and sugars in a large bowl.
  • Add eggs and vanilla and mix to combine.
  • Mix the flour, salt, baking powder and cornstarch in a large bowl.
  • Gradually add the flour mixture to the batter, stirring after each addition.
  • Once incorporated, add the chocolate chips, 1 ½ cups marshmallows, ¾ cups graham crackers and half the broken candy bars. Fold to combine.
  • Place a parchment liner in the air fryer basket and lightly spritz liner with oil.
  • Use a cookie scoop to portion about 1.5 tablespoons of dough. Place dough balls in the air fryer basket, leaving space between each dough ball for the cookies to expand.
  • Cook at 350 degrees F for 8 minutes.
  • Pull the air fryer basket out and top each cookie with 1-2 marshmallows, 1-2 cracker pieces and 1-2 pieces of broken candy bar.
  • Continue cooking at 350 degrees F for 3 more minutes or until cookies are golden brown. To tell if they are cooked through, stick a toothpick in the center of a cookie – if it pulls out clean it’s done.
  • Allow cookies to cool in the basket for 2-3 minutes before transferring to a baking rack to finish cooling.

Notes

  • Store cooled leftover cookies at room temperature in an airtight container for up to 4 days.
  • To freeze: place cooled cookies in a freezer container or bag and store for up to 1 month. Defrost at room temperature.
  • Oven directions: prepare dough as directed. Place dough balls on parchment lined baking sheet and bake at 350 degrees F for 8-12 minutes.
