How to Make Lemon Blackberry Loaf with Frosting
Add the flour, baking powder, baking soda, and salt to a bowl. Whisk to combine.

Mix the sugar and eggs in a separate bowl, then add the yogurt, oil, lemon zest, lemon juice, and vanilla extract, mixing until combined. I use a citrus juicer to squeeze out the lemon juice and a zester to make the zest.

Combine the dry and wet ingredients.

Ingredients

- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ¾ cup granulated white sugar
- 2 large eggs, room temperature
- ½ cup plain yogurt or sour cream
- ½ cup vegetable oil
- 2 Tablespoons lemon zest
- ¼ cup fresh lemon juice, 2-3 medium lemons
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen blackberries, don’t thaw if frozen
- 1 Tablespoon all-purpose flour, additional for tossing with the berries
For the Frosting:
- 1 ½ cups powdered sugar, sift for a smoother frosting
- 1-2 Tablespoons lemon juice, about ½ of a medium lemon
- 1 Tablespoon softened butter
- ½ teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat your oven to 350°F. Grease a standard loaf pan or line it with parchment paper.

- Add the dry ingredients to the wet ingredients and stir just until no dry streaks remain.
- Toss the blackberries with 1 tablespoon of flour, then gently fold them into the batter.1 cup fresh or frozen blackberries, 1 Tablespoon all-purpose flour
- Pour the batter into the prepared loaf pan then smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes, before transferring to a wire rack to finish cooling.
- Make the frosting: whisk ingredients together, starting with 1 Tablespoon of the lemon juice. Add additional juice a few drops at a time until it becomes thick but spreadable – you want it to mound up rather than run.
