A New Twist on Breakfast: French Toast Cups in the Air Fryer

My main complaint with regular French toast is having to fry the battered slices of bread in batches, making it difficult for the family to eat at the same time. But making French toast in muffin cups is so much easier because you can make quite a few at one time and the prep is a quick 10 minutes.

And because you’re using less oil, making French toast cups in the air fryer is a healthier alternative to the traditional skillet-fried version. But they still have the soft and custardy inside and slightly crispy exterior you expect with traditional French toast.

This easy recipe is also a great way to make use of your slightly stale bread. And the muffins can be frozen if you’re into meal prepping.

Ingredients for Air Fryer French Toast Muffins

  • cinnamon swirl bread – or use a loaf of cinnamon raisin bread (it’s amazing in this recipe). See our variations below for more kinds of breads you can use.
  • whole milk and heavy cream – using this combo adds richness and helps with texture. 
  • eggs – firms up the liquids without hiding flavors. 
  • va​nilla – adds a little sweetness and subtle hint of vanilla flavor.
  • kosher sea salt – brings all of the flavors together. 
  • granulated sugar – gives a little sweetness. 
  • butter – allow it to soften slightly before using. 
  • brown sugar, ground cinnamon, all-purpose flour – for the crumble topping.

How To Make French Toast Muffin Cups In The Air Fryer

Preheat the air fryer to 350 degrees F.

Slice the bread into 1 inch cubes. 

Add the milk, cream, eggs, vanilla, salt, and sugar to a large bowl and stir until incorporated.

Add the cubed bread and toss until the egg mixture coats the bread completely.

​Cut the butter into pea size pieces in a separate bowl, using a fork or pastry cutter. Add the cinnamon, brown sugar, and flour. Stir to make the crumble topping. 

Add a 1/2 cup of bread cubes to each muffin cup. Top with the crumble mixture, dividing evenly between each cup.

Place filled muffin cups in the air fryer and cook for 15 minutes or until they are cooked through and golden brown. 

Allow the french toast muffins to cool slightly before serving. 

If desired, garnish with a dusting of powdered sugar, a drizzle of maple syrup, or serve with your favorite toppings. 

Tips and Tricks for the Perfect Air Fryer French Toast Muffin Cups 

  • For best results, use a firm bread.
  • Avoid over soaking the bread as it will get too soggy and fall apart. 
  • We used silicone muffin cups, but you can use a muffin tin if you have one that fits your air fryer. If using a tin you’ll want to grease it with cooking spray to avoiding sticking.

Substitutions and Variations for Air Fried French Toast Cups

  • Type of bread: French bread, challah, and brioche bread can all take the place of the cinnamon swirl. You just need to use a heartier bread for best results, so it doesn’t get too soggy when soaked in the egg mixture.
  • French toast casserole – add the French toast mixture to a greased pan instead of the muffin cups. Look for a 6-9 inch pan, depending on what fits in your air fryer basket. Cook as directed (you may need to cook in batches).

French Toast Muffins Serving Suggestions

​Garnish slightly cooled muffin cups with butter, a dusting of powdered sugar or a drizzle of maple syrup before serving.

Can I make this recipe in the oven?

Yes! Preheat your oven to 350 degrees F. Prepare recipe as directed, but transfer the mixture to a greased casserole dish. Bake for 25-30 minutes, or until golden brown and cooked through. Allow to cool in the pan for 5 minutes before serving.

How to Store Leftover French Toast Muffin Cups

Keep leftovers in an airtight container in the refrigerator for up to 5 days. 

To reheat: cook for 30 second intervals in the microwave or for a couple of minutes in the air fryer at 350 degrees F. 

Can You Freeze French Toast Muffins?

Yes! Place the cooled muffins on a baking sheet and flash freeze for 1-2 hours. Then transfer them to a freezer container or bag and freeze for up to 2 months.

Thaw in the fridge overnight. Then reheat in the air fryer for a few minutes or microwave in 30 second intervals.

Ingredients

  • 6 slices cinnamon swirl bread, (or use cinnamon raisin bread)
  • 3/4 cup milk
  • 1/4 cup heavy cream
  • 4 eggs
  • 1 tablespoon vanilla
  • 1/4 teaspoon kosher sea salt
  • 1 tablespoon granulated sugar
  • 4 tablespoons butter, slightly softened
  • 1/4 cup brown sugar, packed
  • 1 1/4 teaspoons ground cinnamon
  • 1/3 cup all-purpose flour

Instructions

  • Preheat your air fryer to 350 degrees F.
  • Cut the bread slices into 1” cubes.
  • In a large mixing bowl, add the milk, cream, eggs, vanilla, salt, and sugar and mix until incorporated.
  • Add the bread cubes and gently toss in the egg wash to coat.
  • In a separate small bowl, cut the butter into small pea-size pieces using a fork, pastry blender or your fingers. Add the brown sugar, cinnamon and flour and mix to make the crumble topping.
  • Scoop half a cup of bread cubes into each silicone muffin liner (you'll use 6 liners). Top with the crumble mixture, dividing evenly between the muffin cups.
  • Carefully place the muffin cups in the air fryer basket and cook for 15 minutes.
  • Let cool before serving.

Notes

  • You can substitute any sturdy bread for the cinnamon swirl bread, like a French baguette, brioche or challah. 
  • Don’t over soak the bread or it will become soggy and fall apart.
  • Serve with a dusting of powdered sugar, maple syrup, butter or chopped fresh fruit.
  • Store leftovers in an airtight container in the refrigerator for up to 4-5 days. Reheat in the microwave in 30 second intervals until heated through or in the air fryer for 2-3 minutes at 350 degrees F.
  • Muffins can be frozen for up to 2 months. Flash freeze cooled muffins for 1-2 hours before transferring to a freezer-safe container. Thaw in the refrigerator overnight before reheating in the air fryer or in the microwave for 30-second intervals until heated through.
