Something about the Hasselback technique is fun to me. You may have even seen this technique with baking potatoes, sweet potatoes, and even chicken breasts. The trick is easy once you get used to it, and you’ve got to admit they look pretty fancy too.

What is the Hasselback Technique?
It’s a cooking technique where you cut thin slices that donโt go all of the way to the bottom of the potato (or chicken). This technique creates a crispy outer skin while the inside cooks up tender.
The Trick to Cutting the Perfect Hasselback Potatoes
Some people get frustrated when they’re trying to cut the potatoes because the knife ends up going all the way through the potatoes, which ends up in potato slices. And that’s not what we’re going for here.
You can purchase special Hasselback cutters that are simple to use, but if you don’t own one of these I’ve got a workaround for you. And it’s the easiest way I’ve found to make the potato slices.
- Place two chopsticks or wooden spoons lengthwise about 1-2 inches apart on a cutting board and place the potato in between.
- Using a very sharp knife, start at one end of the potato and make 1/4-inch slices. The โslicesโ should be thin and as even as possible.
- When you press the knife down to slice, the wooden spoon or chopsticks will stop the blade from going all of the way through the potato.
- Repeat this process until the whole potato is cut into even slices.

russet potatoes – make sure they are close in size and not too large

Parmesan cheese – I used grated but you can also use shredded
garlic

How to Make Hasselback Potatoes – Air Fryer and Oven Instructions
Air Fryer Hasselback Potatoes
After you’ve washed the potatoes and patted them dry, soften them up by microwaving for 1-2 minutes.
Slice the potatoes into ยผ inch slices by using a Hasselback cutter or the chopstick/wooden spoon method I mentioned before. The slices should go ยพ of the way through the potato.
While the air fryer is preheating to 400 degrees F, spritz the potatoes with oil (I use an oil mister) and season with salt and pepper.
Place the potatoes in the air fryer basket and cook for 18 minutes. Check the potatoes at the 12-minute mark and continue cooking. Depending on the size of your potatoes, the cooking time may vary and you may not need the full 18 minutes.
They are done when a fork or knife can be pushed into the potato easily.
Melt the butter in a small bowl in the microwave while the potatoes are air frying. Remove from microwave and combine butter with the cheese, garlic and parsley to the melted butter. Stir to mix well.
Brush the garlic butter mixture onto the cooked potatoes and they’re ready to serve.
Oven Baked Hasselback Potatoes
Preheat your oven to 450 degrees F. Spray a baking sheet with cooking spray and set aside.
Follow all of the prep instructions mentioned previously then carefully place potatoes on the baking sheet. Cook for 45 minutes to one hour.
Remove from oven then brush potatoes with the butter mixture and enjoy.
How to Store Leftovers
Store leftover accordion potatoes in an airtight container in the refrigerator for up to 4-5 days.
How To Reheat
Place the potatoes in the air fryer basket or oven and cook at 350 degrees F for a few minutes until they are warmed through completely.
You can increase the temperature if you want crispier potatoes, just keep an eye on them since you’re only warming them up.

- Hasselback cutter
Ingredients
- 4 medium Russet potatoes
- 1 teaspoon salt
- 1 teaspoon pepper
- 6 tablespoons butter
- 1/4 cup Parmesan cheese
- 2 tablespoons minced garlic
- 1 tablespoon parsley, chopped
Instructions
- Wash the potatoes and pat dry.
- Place potatoes in the microwave and cook for 1-2 minutes, to slightly soften them.
- Using a Hasselback cutter or a buffer, cut ยผ-inch slices 3/4 of the way through potatoes.
- Preheat your air fryer to 400 degrees F.
- Spritz potatoes with oil and rub to cover the potato. Season with salt and pepper to taste.
- Cook at 400 degrees F for 18 minutes. Check at the 12 minute mark and adjust cooking time accordingly. Potatoes are done when a fork or knife pushes in easily.
- While potatoes are cooking, melt the butter in the microwave. Add the cheese, garlic, and parsley and stir to combine. Brush the butter mixture onto the cooked potatoes and serve.
