This Mini Pancake Cereal is the cutest breakfast idea we’ve seen in a long time. It not only tastes great your kids will enjoy helping you make (and eat) it, too! 

Is it just me or is everything cuter when it’s miniature? I mean think about it. Pets, dollhouse furniture, mini desserts – there’s nothing more adorable!

So where did I come up with the idea for mini pancake cereal? If you are on TikTok at all you know that this has become really trendy lately.

If you aren’t on TikTok you’ve probably seen videos through other social media platforms. That is also where my famous Dalgona Cocoa originated. 

What is Pancake Cereal? 

Mini pancake cereal is actually just pancakes made into miniature form. And rather than cutting them like regular pancakes you can eat them with a spoon like cereal.

Except you may choose to eat them with a fork. Some people add milk and use a spoon, but we like eating them like regular pancakes. 

Since these pancakes are so small, they tend to be crispier than regular size flapjacks. Which will make all the crispy-edge pancake fans happy.

What You Need to Make Mini Pancake Cereal

Ingredients 

Flour – we are using all-purpose white flour.

Sugar – choose your favorite brand of sugar. If you are using a sugar substitute just make sure you convert the amount, as not all of those measure one-for-one with granulated sugar. 

Milk – we have only tested this recipe with whole milk and buttermilk. If you try a non-dairy version be sure to let us know how it turns out. 

Oil – vegetable or canola oil works the best.

Egg

Other Ingredients: Salt, Baking powder, Vanilla

Kitchen Tools and Gadgets Needed

  • Mixing bowl 
  • Whisk
  • Plastic squeeze bottle
  • Griddle (optional)

How To Make Homemade Mini Pancake Cereal 

While your griddle is preheating with oil, add your dry ingredients to a mixing bowl and stir. Then add the egg, milk, vanilla, and oil and combine until smooth, without overmixing. 

Add the batter to your plastic squeeze bottle, then start adding dime-sized dollops of pancake batter to the griddle. If you don’t have a plastic bottle, keep reading for two easy options.

Cook until pancakes are golden brown, repeating until your batter is gone. 

Can You Make Pancake Cereal in Different Flavors? 

Absolutely! The only thing to remember is that if you are using a squeeze bottle you want to make sure that the extra ingredients can fit through the tip.

So for chocolate chips, you’ll want to use mini chips, for blueberries you may want to puree some versus using whole berries. You get the idea. 

Ideas for Pancake Toppings 

Adding toppings to your pancake bowl just makes them more fun! Here are some of our favorite ideas.

Tips for Making the Best Mini Pancake Cereal

  • The batter should be on the thick side but of a pourable consistency. If it’s too thick, thin it out with 1-2 tablespoons of additional milk.
  • If you don’t have a squeeze bottle, you can use a disposable plastic ziptop bag. Fill the bag and seal. Snip a small piece from the corner of the bag to squeeze batter through. You can also use a spoon in a pinch.
  • These cook fast – it’s not a good time to multitask.
  • Mini pancakes are best when eaten immediately.
  • Using a griddle makes cooking these mini flapjacks easy because you can fit so many on there at one time. If you don’t have a griddle you can use a regular pan or a cast iron skillet.

Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 3 teaspoons baking powder
  • ½ teaspoon salt
  • 1 egg
  • ¾ cup whole milk or buttermilk
  • ½ teaspoon vanilla
  • 2 tablespoons vegetable or canola oil

Instructions

  • Preheat the griddle and add a thin layer of oil.
  • In a large bowl, whisk together flour, sugar, baking powder and salt.
  • Add egg, milk, vanilla and oil. Whisk together just until smooth (don’t overwork the batter). Let the batter sit for 5 minutes.
  • Transfer batter to a plastic squeeze bottle (see notes for more options).
  • Add a very small amount of pancake batter, about the size of a dime, to preheated & oiled griddle.
  • Cook for 2-3 minutes or until golden brown, then flip and continue cooking about 1-2 minutes more.
  • Repeat with remaining batter.

Notes

  • Batter should be a thick but pourable consistency. If it’s too thick, thin out with 1-2 tablespoons of additional milk.
