Our Puff Pastry Egg Tarts recipe feature everything you love about breakfast in a handy little pastry. Made with bacon, eggs, cheese and puff pastry they can be cooked in the air fryer or oven and served for breakfast, brunch, and holiday mornings. 

If you are an eggs and toast kind of person, that can get a little boring sometimes. Using puff pastry dough instead of regular bread is genius (and even more delicious!), making it the ultimate breakfast puff pastry recipe.

I like making these when I’m in the mood for something different or when I need a fancier breakfast for guests. And they’re always a hit when I serve them at brunch. Just like our air fryer breakfast bombs and air fryer eggs Benedict.

You may be thinking that puff pastry is only used with sweeter dishes and desserts like cherry danishes and raspberry twists. But don’t limit yourself!

When you add bacon, eggs, and cheese it turns puff pastry into a savory tart of deliciousness. Or try pizza fillings in these homemade hot pockets with puff pastry (your kids will LOVE them!).

Before we get started, know that you’ll probably need to cook in batches if you are using the air fryer. This recipe makes 12 egg squares and most air fryer baskets can’t hold that many at once. 

If needed, you can reduce the ingredients based on your family size, or if you want to make single-serve portions. They are easy enough to make on a weekday morning, especially if you’re only making one or two.

Puff Pastry Egg Tart Ingredients

  • Puff pastry – allow time for the pastry sheets to thaw before using
  • Eggs 
  • Cheese – we like to use cheddar or Monterey jack cheese but use your favorite
  • Bacon – you’ll need to cook the bacon ahead of time
  • Green onions – you can swap for chives if you like them better
  • Parsley 
  • Salt and black pepper

How to Make Egg Tarts in the Air Fryer 

Preheat the air fryer to 380 degrees F. 

While the thawed pastry sheets are still folded, cut each one in half. 

Open each sheet and cut it into 3 pieces, cutting along the crease lines.

Whisk one egg in a small bowl. Using your finger or a basting brush, coat the top of each pastry rectangle. 

Spray the air fryer basket with a little oil, using a mister. You can also use a parchment paper liner for easier cleanup. If you use a liner, don’t place them in the basket while it’s preheating.

Place as many pastry sheets as the basket can fit without overlapping and cook for 12 minutes, or until they are golden brown. Repeat until you’ve cooked all the pastry dough.

After the puff pastry has finished cooking, allow to cool for a couple of minutes. Then cut out a rectangle shape on the top and gently push it down to create a pocket.

Crack an egg into a small bowl and slide it into the pocket without breaking the yolk. You will repeat this process for each tart. 

Sprinkle the egg with cheese and cooked chopped bacon.

Air fry for another 5 minutes, or until the egg white is cooked through and the yolk is your desired doneness.

Carefully take the egg tarts out of the basket and top with salt, pepper, green onions, and parsley if desired. 

Can I make egg tarts in the oven? 

Yes! Follow the same instructions for the puff pastry prep work. Preheat the oven to 400 degrees F and line a baking sheet with parchment paper. 

After you have cut and egg washed the pastry sheets, bake for 15 minutes or until they are golden brown. 

Cut out the rectangle shape from the top of each one, and press it down. 

Add the eggs, cheese, and bacon. Then finish baking for another 15 to 20 minutes. If you like the yolk to be firmer it may take a little longer. 

Storing and Reheating Leftover Egg Tarts

Egg tarts are best when they are served fresh. While you can store them in the fridge and reheat later, the pastry will be a little chewier and you risk overcooking the egg yolk.

Recipe Substitutions and Variations 

Feel free to add your own toppings, but here are some of our favorite ones: 

  • Meats: Canadian bacon, breakfast sausage, country ham, Italian sausage or chorizo
  • Veggies: tomatoes, onions, peppers, mushrooms (if using onions, peppers or mushrooms you may want to sauté them first)
  • Spicy: Add cayenne pepper or top with hot sauce or salsa
  • Sweeter: Drizzle with honey or maple syrup

Do you have to use an egg wash with puff pastry tarts? 

It’s highly recommended. Basting the egg onto the pastry not only helps to give a nice golden color, but it also helps to seal the dough when you are making foods such as apple hand pies

Ingredients

Puff Pastry Dough

  • 2 sheets puff pastry, thawed
  • 1 egg

Eggs & Toppings

  • 12 eggs
  • 1/2 cup cheddar cheese, shredded
  • 1/2 cup cooked bacon, chopped into small pieces
  • 2 green onions, chopped (optional garnish)
  • 1 teaspoon parsley, dried or fresh (optional garnish)
  • salt and pepper, to taste

Instructions

  • Preheat air fryer to 380 degrees F.
  • While still folded, cut each pastry sheet in half. Open each section and cut each half into 3 pieces, cutting along the crease lines.

  • In a small bowl, whisk the egg. Using a pastry brush or your finger, coat the top of each pastry rectangle with the beaten egg.

  • Spritz the air fryer basket with a little bit of oil. Place as many pastry rectangles as you can fit in your air fryer basket without overcrowding. The quantity will vary based on the size of your fryer basket.
  • Cook for 12 minutes, or until golden brown. Remove and repeat the process until all the pastries are cooked.
  • Allow to cool for a couple minutes before cutting a rectangle in each pastry with a sharp knife. Gently push the rectangle down into the pastry with your fingers, creating a pocket.
  • Transfer the cooked pastry back to the air fryer basket. Break an egg into a small bowl and gently slide it into the pastry pocket without breaking the yolk.
    12 eggs
  • Top with shredded cheese and chopped bacon.
    1/2 cup cheddar cheese, 1/2 cup cooked bacon
  • Cook for 5 minutes, or until the egg white is cooked through and yolk is cooked to your preference.
  • Carefully remove cooked pastry from the basket and top with chopped green onion, parsley, salt and pepper, if using.

Notes

  • Oven-baked directions: Preheat oven to 400 degrees F. Prepare the puff pastry dough as directed. Place squares on a parchment lined baking tray & bake for 15 minutes or until golden brown. Allow to cool for a couple minutes then cut rectangles and push into the pastry. Gently add an egg and top with cheese and bacon and bake for 15-20 minutes more until the white is firm.
  • Best eaten fresh. Leftovers can be stored in the refrigerator for 1-2 days but the pastry dough may become tough.
