Beef Brisket Sliders Ingredients
For the Apricot BBQ Sauce
- Barbecue sauce – we used KC Masterpiece Honey and Molasses flavor but you can use your favorite brand
- Apricot preserves – adds a fruity sweetness to the sauce
- Brown sugar – lightly packed
- Garlic powder
For the Sliders
- King’s Hawaiian rolls
- Leftover beef brisket – see below for more meat options
- Swiss cheese – the nutty flavor complements the smoky flavor of the brisket
- Butter – helps the seasonings to stick to the buns
- Everything But the Bagel seasoning mix
- Fresh parsley, optional

How to Make Sliders with Leftover Brisket
The Sauce:
Pour the BBQ sauce into a medium saucepan. Stir in the apricot preserves, brown sugar, and garlic powder until well mixed. Heat on medium heat until the sauce starts to bubble. Take it off the heat and let it cool.
The Sliders:
Set your oven to 350°F. Chop the smoked beef brisket finely until you have 2 cups of meat.
Grab the slider buns and slice them in half horizontally with a sharp serrated knife. Place the bottom buns in 9×13 baking dish.
Spread the chopped brisket over the rolls, drizzle with the BBQ sauce and layer on the cheese slices. Add the top buns.
Brush melted butter over the top of the buns and sprinkle with Everything but the Bagel seasoning and parsley if using.
Cover the dish with foil and bake for about 10 minutes, just until the cheese melts and everything is warm.
Want crispy tops? Take off the foil and bake for one more minute, but keep an eye on them to avoid burning.
Take the dish out of the oven and separate the individual sliders with a knife. We like to pile the sliders on a platter and let everyone serve themselves.
Tips for Making BBQ Brisket Sliders
- Make sure the brisket is chopped into smaller, bite-sized pieces for easier eating.
- While I used some leftover brisket for this recipe, you can also buy pre-cooked brisket from the deli, grocery store or your favorite BBQ joint. Just make sure to chop it up into small pieces and then follow the recipe as written.
- If your beef is a little on the dry side, stir in a little beef broth to remoisten it, before building your sandwiches.
- Slightly toast the cut sides of the buns for added texture and flavor and to keep the sliders from getting soggy.
Recipe Substitutions & Variations
- If you don’t have brisket, try using other leftover beef like chuck roast or short ribs.
- Not a fan of Swiss cheese? You can use any good melting cheese like provolone, American or cheddar cheese.
- For a punch of heat, add a dash of hot sauce or crushed red pepper flakes to the BBQ sauce.
- Add unique toppings like green chiles, crispy fried onions or creamy Southern coleslaw for a fresh twist.
How many brisket sliders per person?
While the general rule of thumb is 2-3 sliders per adult, this will vary based on the size of the buns and assumes you are serving other side dishes. For kids or light eaters, figure 1-2 sliders per person. If you’re feeding hungry teenagers, you may want to go with 3-4 per teen.
What to Serve with Beef Brisket Sliders
Serve these little sandwiches with extra barbecue sauce on the side, mustard, pickles, or your favorite condiments. We like to pair them with crowd-friendly sides like country style potato salad or favorite pasta salad. If you’re looking for a crunchy accompaniment, try potato chips, fries or air fried onion rings.
How to Store Leftover Chopped Beef Sliders
These sandwiches are best eaten the day they are made. If you have leftovers, wrap the sliders individually in foil, place them in an airtight container and store them in the fridge for up to three days.
Reheat the wrapped sandwiches at 300 degrees F in the oven or air fryer for a quick lunch or snack. We don’t recommend reheating in the microwave because the buns will get soggy.

Beef Brisket Sliders (Made with Leftover Brisket)
Ingredients
SAUCE:
- 16 ounces barbecue sauce, we used KC Masterpiece Honey and Molasses BBQ Sauce for this recipe
- 1 cup apricot preserves
- 1/4 cup brown sugar, lightly packed
- dash garlic powder
SLIDERS:
- 12 count Kings Hawaiian rolls
- 2 cups beef brisket, finely chopped (SEE NOTES)
- 6 slices Swiss cheese
- 1/4 cup melted butter
- 1 teaspoon Everything But the Bagel seasoning mix
- fresh parsley, chopped, optional
Instructions
SAUCE:
- Pour the BBQ sauce in a medium size saucepan, and add the apricot preserves, brown sugar and garlic powder, and stir well to combine.
- Heat over medium heat until the sauce is bubbly. Remove from heat and let cool.
SLIDERS:
- Preheat the oven to 350 degrees F.
- Finely chop the brisket until you have 2 cups of chopped meat.
- Remove the rolls from the package. Using a large sharp serrated knife, cut the rolls in half lengthwise. Set the bottom of the rolls in a baking dish.
- Add the chopped brisket to the rolls, top with the bbq sauce and cover with the cheese slices on top.
- Place the roll tops on top of the sandwiches and brush the tops with melted butter. Sprinkle Everything but the Bagel Seasoning and chopped parsley (is using) over the buns.
- Cover the pan with foil, and place the dish in the oven. Bake for about 10 minutes or just until the cheese melts and the sandwiches are heated through.
- If you like your sliders toasty on top, remove the foil and bake for 1 more minute, watching them constantly to make sure they don’t get too brown on top.
- Remove dish from the oven, cut sliders and serve with the remaining BBQ sauce.
Notes
- I used leftover beef brisket, but you can buy it already cooked from the deli, grocery store or your favorite BBQ restaurant.
- You want to chop the meat into smaller pieces so it’s easier to eat.
- This recipe can easily be doubled or tripled for larger gatherings.
- I used Swiss cheese, but you can use other melting cheeses like provolone, cheddar, or American if preferred.
