I’m a Midwestern girl and can eat potatoes just about any way possible. And this easy recipe is another one of my favorites, but not just for that reason.
Roasting red skin potatoes in the air fryer is super simple. You’ll get flavorful potatoes that are crispy on the outside and soft on the inside in about 30 minutes!

Air Fryer Roasted Red Potatoes Ingredients
- small red potatoes – we’re using reds because they have a thinner skin that crisps up nicely.
- olive oil – helps the spuds get crunchy. You can substitute avocado oil if that’s what you have on hand.
- minced garlic – adds a rich, savory flavor.
- seasonings – Nature’s Seasoning blend, paprika, dried parsley and kosher salt, these basics add flavor, brightness and color.
- shredded Parmesan – the nutty, saltiness is perfect for potato dishes.

How to Make Roasted Red Potatoes in the Air Fryer
Rinse the potatoes and pat them with a paper towel until they are as dry as possible.
Preheat the air fryer to 400 degrees F.
For smaller potatoes, slice them in half, or quarters if using larger potatoes.

Add the chopped potatoes to a mixing bowl and cover them with the oil, spices, and parmesan cheese. Toss to make sure they are all coated evenly.
Place potatoes in the air fryer basket, making sure your basket isn’t overcrowded.
Cook for about 15 minutes or until they’re soft enough that a fork goes through them easily. The goal is for them to be crispy on the outside, but softer on the inside.

Tips for Making the Best Crispy Roasted Potatoes
- Make sure the potatoes are completely dry before starting – the more moisture you can remove the crispier the potato chunks will get.
- Try to cut the potato slices evenly and close to size for more even cooking.
- Don’t skimp on the oil because it adds a little crisp too, but you don’t want to drown the chunks in oil, either.
- If you have a smaller air fryer basket you may need to cook in batches – don’t overcrowd the basket.
- Turn the potatoes or give the basket a good shake at the halfway mark.
- If you’re using a parchment paper liner, wait to place it in the basket until you are ready to add the potatoes. When the air fryer preheats, it blows the hot air and you don’t want the liners flying around being a fire hazard.

This recipe is versatile and easily adaptable to other flavor combinations. Here are a few ideas to try:
- Ranch dry seasoning – toss potatoes with ranch seasoning mix. Take it to the next level by topping them with chopped bacon and shredded cheddar in the last couple minutes.

How to Make Red Skin Potatoes in the Oven
While your oven is preheating to 425 degrees F, prepare the potatoes as directed. Transfer seasoned potatoes to a parchment-lined baking sheet, spread to a single layer and place the pan in the oven. Roast for 25-30 minutes, flipping at the halfway point, until potatoes are golden and crispy.
Best Way to Store Leftover Potatoes
Store leftovers in an airtight container in the refrigerator for 4-5 days. I recommend reheating leftovers in the air fryer or oven to maintain crispiness: air fryer at 370 degrees F for 3-5 minutes or place an a sheet pan and bake at 400 degrees F for 7-10 minutes. Avoid microwaving, as it makes them soggy.

- 1 pound baby red potatoes
- 1 tablespoon olive oil
- 1 tablespoon minced garlic
- 1 tablespoon Nature’s Seasoning Blend
- 1/2 teaspoon paprika
- 1/2 teaspoon dried parsley
- 1/2 teaspoon Kosher salt
- 1 cup shredded Parmesan
Instructions
- Preheat the air fryer to 400 degrees F.
- Rinse the potatoes and pat dry completely.1 pound baby red potatoes
- Cut the potatoes – in half for smaller potatoes, in quarters for larger potatoes.
- Add potato slices to a large bowl. Add remaining ingredients and stir to coat.1 tablespoon olive oil, 1 tablespoon minced garlic, 1 tablespoon Nature’s Seasoning Blend, 1/2 teaspoon paprika, 1/2 teaspoon dried parsley, 1/2 teaspoon Kosher salt, 1 cup shredded Parmesan
- Place seasoned potatoes in the air fryer basket, being careful not to overcrowd the potatoes.
- Cook for 12-15 minutes, until potatoes are soft enough to puncture with a fork.
- Remove potatoes from basket & serve.
