Now that summer (and the heat!) has officially arrived, I’m all about making meals that don’t require turning on the oven or stovetop. In addition to not wanting to heat the house up any more than absolutely necessary, I am always looking for ways to reduce the amount of time I spend in the kitchen. Enter 6-Ingredient Fiesta Salad.
No cooking, just 10 minutes from start to finish, budget friendly and bursting with flavor, 6-Ingredient Fiesta Salad satisfies on all levels. You most likely have all the ingredients on hand, making this an easy side dish to toss together at the last minute. At a cost of about $2, 6-Ingredient Fiesta Salad is easy on the wallet without sacrificing flavor.
This versatile dish can be served in a number of ways: as a starter with tortilla chips, as side salad dish with the main meal and I’ve also scooped it on lettuce for a tasty main dish salad. And no mayo means this humble side dish is perfect for your cookouts during the dog days of summer.

6-Ingredient Fiesta Salad
- 1 can 15 oz. sweet corn, drained
- 1 can 15 oz. black beans, rinsed & drained
- 1 small tomato chopped (or quarter a handful of cherry tomatoes)
- 1/2 cup diced red bell pepper
- 1/4 cup diced red onion
- 1/3 cup Italian dressing
- Salt & pepper to taste
Using a medium-sized bowl, mix all ingredients.
Season with salt & pepper if desired.
Chill for 30 minutes or serve immediately.

Active prep time: 10 minutes
